    Notes: Are texture and appearance important factors in consumer choice of cheddar cheese? Quantitative descriptive analysis gives large data sets, but it is not clear how much is relevant to consumer perception. In a study of 20 cheddar style cheeses, free-choice profiling was employed to explore consumer discrimination. Appearance was the dominant factor, in particular color. Precise coloration was important to panelists. Textural descriptors related to perception of cheese character in the mouth appeared to relate to styles of cheese production and regional differences. Maturity was also a descriptor that could be defined in textural terms, and cheeses described as mild, vegetarian and low-fat cheeses were discriminated using descriptors related to elasticity and immaturity. It was apparent that the cheddar cheeses were perceived as being very varied in both appearance and texture, and the consumer panel discriminated between products readily using a range of descriptors.

    Notes: We investigate the motion of a fluid interface through a thin cell, used as a model for porous media with heterogeneous wettability properties. We analyze how the distribution of wettability defects modifies the shape of the advancing interface. Solid substrates are prepared with a photolithography technique to create wettability defects. Several distributions of defects are generated, with different surface densities and different position ordering. The amplitude of fluctuation of the fluid interface is measured for the different defect distributions and with or without gravity stabilization of the interface. When the interface is stabilized by gravity, the capillary length sets the distance below which defects strongly cooperate to pin the interface and trap air bubbles. Trapping of the advancing interface by the defects is dependent on the spatial distribution of defects. The interface fluctuation is much larger for strongly disordered distributions and is related to a correlation length of the defect pattern. © 1997 American Institute of Physics.

    Notes: Testing of the extent to which different complex traits share common genetic control provides a means to distinguish associations that are truly diagnostic of genetic potential for improved adaptation to abiotic stress, from incidental phenotypic correlations. In two generations of progeny from a cross between Gossypium hirsutum and Gossypium barbadense, quantitative trait loci (QTL) mapping was used to evaluate correspondence in genetic control of selected physiological measures and productivity under water-limited and well-watered environments, respectively. A total of 33 QTLs were detected for five physiological variables [osmotic potential (OP), carbon isotope ratio (δ13C; indicator of water use efficiency), canopy temperature, chlorophyll a and b], and 46 QTLs for five measures of crop productivity [dry matter, seed cotton yield (SC), harvest index, boll weight, and boll number]. QTL likelihood intervals for high SC and low OP corresponded in three genomic regions, two of which mapped to homoeologous locations on the two subgenomes of tetraploid cotton. QTLs for δ13C showed only incidental association with productivity, indicating that high water use efficiency can be associated with either high or low productivity. Different cotton species have evolved different alleles related to physiological responses and productivity under water deficit, which may permit the development of genotypes that are better-adapted to arid conditions.

    Notes: Raspberry juices treated with two commercial pectinase preparations lost almost 20% of their total anthocyanin pigments; losses were related to both concentration of enzyme and time of treatment. Analysis of individual anthocyanins showed differences between the enzymes. Ultrazyme reduced all components in similar proportions, whereas Pectinex apparently also converted cyanidin-3-sophoroside and cyanidin-3-glucosylrutinoside into cyanidin-3-glucoside and cyanidin-3-rutinoside respectively, presumably by hydrolysis of β1–2 glucosidic bonds by glucosidase present in the Pectinex.

    Notes: This study investigated 84 patients with burning mouth syndrome (BMS), who were asked to complete a hospital anxiety and depression (HAD) scale questionnaire. A control group of 69 patients was also included. All patients were interviewed regarding parafunctional habits and were subjectively examined for signs of occlusal wear of the natural teeth or dentures. The results demonstrated that parafunctional habits were present in 61% of patients with BMS. There was a statistically significantly relationship between parafunctional habits and anxiety as indicated by the HAD scale, but not with depression.

    Notes: Pemphigus vulgaris (PV) is a rare but potentially fatal autoimmune bullous disorder which frequently affects the oral mucosa. Although the essential cause of PV is unclear, its onset has occasionally been associated with drug therapy, in particular penicillamine. The patient described in this paper was a 78-year-old diabetic man who developed oral lesions of PV following institution of glibenclamide therapy.

    Notes: This paper outlines the development of an apparatus to supply air with both controlled temperature and relative humidity, at a variety of flow rates up to 114 L min−1. To achieve adjustable constant relative humidities in the air, the two-pressure principle was used. This method involved saturating the air at a higher pressure, and then passing the air through a pressure release valve to the lower working pressure to achieve the desired humidity, while controlling the temperature to the desired level. The absolute pressure when the saturation is achieved determines the humidity of the final air. Standard design procedures were followed to ensure the air approached saturation in the pressurized column and that the amount of water was sufficient to make sure the columns would not run out of water during an experiment. The problems encountered included a pressure fluctuation coming from the compressor through the pressure regulator, and a regular fluctuation in the temperature of the water, within a 90 min period, when the water temperature was used to control the air temperature exiting the column. These problems were overcome by using two-pressure regulators on the air supply and by controlling the temperature of the water rather than the air temperature. The result was a stable but adjustable temperature and relative humidity air supply.
