    Notes: 1 The role of histamine in heat-induced cardiovascular changes is uncertain. The purpose of this study was to examine effects of histamine H-1- and H-2-antagonism on heart rate, mean arterial blood pressure (MAP), localized body temperature changes, survival times, and lethal body temperatures that occur during the exposure of anaesthetized rats to 35 GHz radio frequency radiation (RFR). 2 Forty-eight ketamine-anaesthetized Sprague–Dawley rats were exposed, in several different treatment groups (n = 8 in each), to 35 GHz RFR at a level that resulted in significant body heating and subsequent death. During irradiation, a continuous increase in heart rate and a biphasic response in blood pressure (initial increase followed by a decrease) were observed in all groups of animals. 3 An H-1-antagonist, diphenhydramine (1 mg kg−1 body wt) and an H-2-antagonist, cimetidine (5 mg kg−1), administered after sustained RFR exposure, failed to reverse the RFR-induced hypotension. High doses of the drugs (5 and 10 mg kg−1, respectively) also did not alter the response. Post-RFR survival time was significantly decreased in the high-dose drug-treated group, compared with vehicle-treated (0.9% NaCl, 50% ethanol and 50% D5W) controls. 4 In experiments in which the two drugs were administered prior to RFR exposure, MAP in animals receiving high-dose antihistamines was significantly depressed compared with that of vehicle-treated animals during the first 35 min of RFR exposure. Antihistamine pretreatment, however, did not alter the total RFR exposure time required for death to occur. 5 In summary, pharmacological blockade of H-1 and H-2 receptors is not beneficial in anaesthetized rats made hypotensive by RFR exposure. This indicates that activation of H-1 and H-2 receptors by histamine does not occur to any significant extent and does not mediate the hypotensive response developed in this model of hyperthermia.

    Notes: In 1834 the rector of St. Mary's Episcopal Church in Burlington, New Jersey desired to place a cross atop his newly-refurbished sanctuary. No ordinary rector, George Washington Doane also served as the Episcopal bishop of New Jersey. Shortly after taking charge of St. Mary's in 1833, he and his vestry had decided to renovate their old church, and their ambitious new design featured a cruciform plan with Greek details, including a pediment adorned with lotus leaves and a tower “derived from that built at Athens... commonly called the Tower of the Winds.” But when Doane carried out the plans for “an enriched Greek Cross” to be mounted on the roof, the community stood aghast. A local Presbyterian minister chronicled the confrontation, and he began by asserting that most of St. Mary's vestrymen had originally approved the designs without “noticing the Cross at the time.” The project was thus completed, and to the vestry's “great surprise, as well as that of many in the community, of all ‘denominations’—lo! a Cross made quite a Catholic appearance on the apex of the pediment!” Controversy arose, “both in the Vestry and out of it,” and “after a very warm meeting, one of the Vestry shortly after declared that unless the Cross was taken down very soon, it should be pulled down.”

    Notes: Pork loins were pumped to 110% of original weight with solutions containing 0.35% salt and 0.35% phosphate (P), salt and phosphate plus 3% sodium lactate (SL), or salt and phosphate plus 2.5% potassium lactate/potassium acetate (PL/PA). Chops were evaluated freshly cooked and precooked, stored (4C, 2 days) and reheated. Chops from SL and PL/PA chops experienced lower cook losses than unpumped controls. Reheating produced additional cook losses which were unaffected by enhancement treatment. Enhancement produced reheated chops with lower shear values and higher tenderness scores than those of freshly cooked controls, and addition of either SL or PL/PA produced even more dramatic results. Warmed-over flavor after reheating precooked chops was reduced by the SL enhancement solution.

    Notes: Corn gluten meal (CGM) and pH adjusted (6.6)/particle size-reduced (∼7μm-MC7; ∼38μm-MC38) CGM increased oxidative and microbiological shelf-life of a model emulsified meat system. After 14 days, TBARS were significantly lower for samples containing MC7 and MC38 when compared to controls, and samples containing soy protein isolate (SPI) or native CGM. Based on aerobic plate counts, MC38 and CGM increased product shelf-life by ∼7days compared to SPI- and MC7-containing products and controls. These results suggest that the use of corn gluten meal substances in an emulsified meat product could create a more shelf stable product. These functional characteristics may make the incorporation of corn gluten meal into foods more feasible.

    Notes: This study used comparisons across nine populations of Trifolium repens (white clover) in conjunction with drought to examine physiological responses to ultraviolet-B radiation (UV-B). Plants were exposed for 12 weeks to supplementation with 13.3 kJ m−2 d−1 UV-B, accompanied by 4 weeks of drought under controlled environmental conditions. UV-B increased the levels of UV-B-absorbing compounds and of flavonol glycosides and this effect was synergistically enhanced by water stress. These changes were more pronounced for the ortho-dihydroxylated quercetin, rather than the monohydroxylated kaempferol glycosides. UV-B increased leaf water potential (ψL) by 16% under drought and proline levels by 23% under well-watered conditions. The intraspecific comparisons showed that higher UV-B-induced levels of UV-B-absorbing compounds, of quercetin glycosides and of ψL were linked to lower plant productivity and to higher UV-B tolerance under well-watered conditions. These findings suggest that: (1) slow-growing T. repens ecotypes adapted to other stresses have higher capacity for physiological acclimation to UV-B; and (2) that these attributes also contribute to decreased UV-B sensitivity under drought.

    Notes: The Edinger–Westphal nucleus (EW) is a brain region that has recently been implicated as an important novel neural target for ethanol. Thus, the EW is the only brain region consistently showing elevated c-Fos expression following both voluntary and involuntary ethanol administration. Ethanol-induced c-Fos expression in the EW has been shown to occur in urocortin I-positive neurons. Moreover, previous reports using several genetic models have demonstrated that differences in the EW urocortin I system are correlated with ethanol-mediated behaviours such as ethanol-induced hypothermia and ethanol consumption. The aim of this study was to confirm these relationships using a more direct strategy. Thus, ethanol responses were measured following electrolytic lesions of the EW in male C57BL/6J mice. Both EW-lesioned and sham-operated animals were tested for several ethanol sensitivity measures and ethanol consumption in a two-bottle choice test. The results show that lesions of the EW significantly disrupted ethanol-induced hypothermia, while having no effect on pupillary dilation, locomotor activity or ethanol-induced sedation. In addition, EW-lesioned animals showed significantly lower ethanol preference and total ethanol dose consumed in the two-bottle choice test. EW-lesioned animals also consumed less sucrose than sham-operated animals, but did not have altered preferences for sucrose or quinine in a two-bottle choice test. These data support previously observed genetic correlations between EW urocortin I expression and both ethanol-induced hypothermia and ethanol consumption. Taken together, the findings suggest that the EW may function as a sensor for ethanol, which can influence ethanol consumption and preference.

    Notes: : We evaluated quality characteristics of enhanced pork derived from pigs from commercial genetic backgrounds (Duroc, Large White, Pietrain, Hampshire, Landrace, and 2 synthetic lines). Loins enhanced to contain 0.4% phosphate and 0.25% salt were evaluated by a 10-member sensory panel for visual appearance, flavor, and texture. Instrumental color, cook loss, and Warner-Bratzler shear force were also determined. Except for tenderness, genetic line had limited effects on sensory characteristics; it did affect visual pink color, lightness, and marbling. Enhancement positively affected flavor and juiciness. Pork from pigs of some of the genetic backgrounds responded positively to enhancement in terms of color, purge, cook loss, and instrumental color, whereas others responded very little.

    Notes: Corn gluten meal (CGM) was pH-adjusted (6.6) and particle-size reduced (MC7, 7 μm; MC38, 38 μm) then compared with native CGM and soy protein isolate (SPI) for emulsifying activity (EA) and emulsifying stabilization (ES), oil-binding capacity (OBC), and water-holding capacity (WHC) in vitro and in an emulsified meat model system. MC7 and MC38 had EA, ES, and OBC, which was superior to native CGM; no significant change occurred in water solubility. In 1% and 2% NaCl solution, MC7 and MC38 resulted in more stable emulsions than SPI. In an emulsified meat model system, SPI had superior ES to CGM-based substances; however, reheated cook losses did not differ.
