    Notes: Structured meat products which could bind raw as well as cooked would be superior to existing structured products. Therefore, the algin/calcium gel system was, studied. Structured beef steaks were made using three levels of sodium alginate and three levels of CaCO3. Three additional treatments were included as controls. Treatments were subjectively evaluated for six raw parameters: discoloration, color intensity, alginate pocket area, alginate pocket size, percentage fat and raw bind. Treatments were also subjectively evaluated for four cooked parameters: aroma, flavor, mouthfeel and cooked bind. The algin/calcium gel mechanism can be used to produce structured beef steaks which bind in both the raw and cooked state. Optimum ingredient levels were 0.8–1.2% sodium alginate, 0.144–0.216% CaCO3 with 500 ppm sodium erythorbate.

    Notes: Structured beef was prepared with eight combinations of the ingredients (sodium alginate, calcium carbonate, lactic acid/calcium lactate) used to bind meat with the algin/calcium gelation mechanism at nine pH values (4.1–6.4) in order to evaluate their influence on its physical and sensory characteristics. Products with alginate alone were similar to samples from the treatment without binders. The combination of alginate/calcium/lactate gave products of higher values (P〉0.05) for parameters such as hardness in the raw state, bind and penetration than all other treatments. Decreasing pH values increased raw and cooked product hardness and penetration force. Products of pH values 5.7–5.8 were superior to other treatments in bind scores evaluated by a sensory panel.

    Notes: Following the procedure suggested by May, Ibel & Haas [J. Appl. Cryst. (1982), 15, 15–19] for the correlation of transmission data with the level of neutrons scattered incoherently into the full solid angle 4π measurements have been made of the transmission and incoherent scattering intensities of aqueous buffers of different H2O/D2O ratios at temperatures between 280 and 343 K. That it is possible to extend the proposed calibration procedure to absorbing-ions-containing buffers is also shown.

    Notes: Small-angle neutron scattering experiments have been performed with aqueous dispersions of binary lipid mixtures. One component was protonated, the other was partly deuterated. By varying the mole fraction of the deuterated species the mean scattering-length density of the lipid lamellas and hence the contrast between liposomes and the solvent was changed. It is shown that this inverse contrast variation has the advantage of (i) a simpler data analysis, (ii) an increased resolution of homogeneous and heterogenous lipid distributions and (iii) a considerably increased sensitivity for the evaluation of phase diagrams in segregated lipid mixtures. Phase boundaries can now be determined to an accuracy of better than 1 mol%.

    Notes: Abstract DNA hybridization experiments demonstrated that the gene clusters encoding the F8 fimbriae (fei) as well as the type I fimbriae (pil) exist in a single copy on the chromosome of E. coli O18:K5 strain 2980. In conjugation experiments with appropriate donors, the chromosomal site of these gene clusters was determined. The pil genes were mapped close to the gene clusters thr and leu controlling the biosynthesis of threonine and leucine, respectively. The fei genes were found to be located close to the galactose operon (gal) between the position 17 and 21 of the E. coli chromosomal linkage map.

    Notes: Abstract The avirulent Salmonella typhimurium F885 was transformed with a plasmid carrying the cloned S fimbriae genes of a uropathogenic Escherichia coli. The resulting transformant (F885-1) produced efficiently E. coli S fimbriae and was used for live oral vaccination of rats. For comparison rats were immunized subcutaneously with isolated S fimbriae. Both routes of vaccination resulted in a significant IgG antibody response to S fimbriae. In addition live oral vaccination induced a serum IgA response against S fimbriae. After transurethral infection of rats with a S fimbriae producing E. coli a 10-fold reduction of bacterial counts in the kidney was observed in rats orally vaccinated with F885-1 as compared to unvaccinated controls. This study suggests that the avirulent Salmonella F885 may be used as a fimbrial antigen carrier for oral vaccination against renal infections.

    Notes: Abstract The synthesis of the urea channel inclusion complexes of poly(tetrahydrofuran)) (PTHF) is described. These complexes could be obtained in the form of single crystals forM n ≤ 1700 g/mol of PTHF as the guest, and they exhibit a hexagonal unit cell (a=8.20(2) Å,c=11.05(3) Å) very similar to the wellknown urea-n-alkane complexes. X-ray investigations, elemental analysis and density measurements suggest an all trans zig-zag conformation of the polymer chain. The formation of the complexes was exploited for the purpose of fractionation of PTHF, making use of the correlation between temperature of crystallization andM n of the included polyether chain. The distribution and the molecular weights of the fractions, obtained by extractive crystallization, were determined by reversed phase HPLC analysis and vapour pressure osmometry (VPO). Narrow fractions with Mw/Mn=1.02 were obtained from commercial PTHF samples. Successive fractionation was applied also on product mixtures from oligomer synthesis, as demonstrated for the separation of the dodecamer H-(o-(CH2)4-)12OH.

    Notes: Abstract Comparison of the period distributions of various classes of CVs confirms an extreme bias of the synchronous AM Her systems toward short orbital periods, while the DQ Her systems do not differ significantly from the distribution of non-magnetic systems. This suggests either strong selection effects or enhanced evolution of the AM Her systems. There is as yet no obvious bimodality in either the magnetic field distributions of isolated white dwards or of CV primaries. However, clear differences between the two exist: the strongest being that magnetic primaries are overrepresented among short period CVs by more than an order of magnitude in comparison to the field white dwarfs.
