Notes: Abstract The growth of Aspergillus parasiticus NRRL 2999, A. parasiticus NRRL 3000 and A. flavus NRRL 3251 on whole wheat bread and on cake (‘Rührkuchen’) was compared and the formation of the aflatoxins B1, B2, G1, G2 and M1 on these substrates and, for purpose of comparison, on malt extract agar was determined. On cake the moulds grew better than on bread and formed the highest yields of aflatoxins. Malt extract agar was the most unfavourable substrate for toxin production. The ratio M1/B1 on bread and cake was in the order of 0.1–0.4 and was higher than the data reported for grains. The highest yields of aflatoxin B1 (1.0 μg/g) were produced by A. flavus NRRL 3251 on cake.

Notes: Summary The moulds Aspergillus parasiticus (aflatoxins B1, B2, G1, G2, and M1), A. ochraceus (ochratoxin A) and Penicillium chrysogenum (citrinin) were grown on whole wheat bread either in the presence or absence of oxygen. In the presence of oxygen, both A. parasiticus and A. ochraceus developed dense colonies and formed considerable amounts of mycotoxins whereas Penicillium chrysogenum only grew and produced citrinin on the surface of the bread. In the absence of oxygen fungal growth did not occur and most of the toxins were undetectable even in regions of bread immediately adjacent to the moulds although a very slight diffusion of the aflatoxins B1 and G1 through 1 cm was observed. It is concluded that diffusion of the tested mycotoxins from hyphae into bread is not a problem for food safety.

Notes: Abstract A thermogravimetry study of a series of cyclophane bis(sulfoxides) (1–6) has shown that thermal decomposition of these compounds occurs in two stages with a stepwise loss of the sulfoxide groups at well defined decomposition temperatures. The stepwise thermal cleavage has been rationalized in terms of the stereochemistry of the sulfoxide groups and the strain associated with the resultant elimination products.

Notes: Abstract The Fusarium and Myrothecium mycotoxins roridin A, diacetoxyscirpenol, verrucarin A, T-2 toxin and zearalenone (10−2 and l0−3 mg/ml) inhibit the unspecific dehydrogenase activity of baker's yeast (Saccharomyces cerevisiae) in vivo. The action of these toxins is in the same order as that of aflatoxin B1. It is suggested that at least the trichothecenes decrease the dehydrogenase activity by an interaction with thiol groups of the active center of the enzymes.

Notes: The routine use of the INEPT pulse sequence is shown to be the method of choice for the assignment of multiplicity from 13C NMR spectra where no prior information about the 1J(CH) coupling constants is available, or where these are expected to vary over a large range. This technique is illustrated using spectra obtained from polyhalogenated monoterpenes isolated from the red alga Plocamium angustum, which have 1J(CH) values varying from 127 to 203 Hz.
