    Notes: An important consideration in the investigation of liquid food quality degradation by oxidative reactions is the kinetics of oxygen uptake. The purpose of this research was to investigate oxygen uptake rates in a liquid food during storage. A commercially prepared infant formula was used as the model system. The influence of three variables (light intensity, storage temperature and initial concentration of dissolved oxygen) on the rate of oxygen uptake was determined. Results of the study indicated that the oxygen uptake in liquid foods follows fist order rate kinetics during the first 24 hr of storage. In the range of 0–4300 lux, it was found that the rate of oxygen uptake increases linearly with increasing light intensity. The rate of oxygen uptake at three different levels of initial dissolved oxygen from 1 mg/liter to nearly saturation showed that the rate of oxygen uptake increases linearly with increasing initial dissolved oxygen concentration. The influence of temperature on rate of oxygen uptake indicated that the Arrhenius equation could be used to describe the relationship.

    Notes: The primary objective of this study was to determine the convective heat transfer coefficient which could be expected in a fluidized bed retort when the heating medium was air fluidized silica sand. An average heat transfer coefficient of approximately 329 W/(m2C) was experimentally determined. Curves for heating conduction and convection type foods in a fluidized bed and a rotary steam retort are compared.

    Description / Table of Contents: Zusammenfassung Eine spektrophotometrische Methode zur Bestimmung von Spuren Cyanid in wäßrigem Milieu mit Hilfe eines mit Hg(II) komplexierten heterocyklischen Azofarbstoffes wurde beschrieben. Hierbei verdrängt ein stärker komplexierendes Anion das Farbreagens aus dem Metallkomplex. Ammonium(2′-amino-3′-hydroxypyridyl-4′-azo)benzol-4-arsenat (AHP-4A) in komplexer Verbindung mit Hg(II) wurde für die genaue Bestimmung von 0,13–1,46μg CN−/ml verwendet. Das Anion wurde auch nach der Reaktion von Cyanid mit Hg(II)-(AHP-4A)-Komplex (wahrscheinlich zu einer Brückenverbindung) bestimmt. Der Anstieg der Extinktion ist der Cyanidkonzentration im Gebiet 0,04–0,37μg/ml proportional, aber dieses Verfahren ist nicht sehr genau. Der Einfluß von Fremdionen wurde untersucht. Die Empfindlichkeit anderer Hg(II)-Komplexe wurde zum Vergleich herangezogen.
    Notes: Summary A simple spectrophotometric method for the determination of trace amounts of cyanide ions in aqueous medium, using a heterocyclic azo dye complexed with mercury(II) for the first time, is described. The visual comparative method has been used in which a stronger complexing anion displaces a coloured reagent from the metal-ligand complex. Ammonium (2′-amino-3′-hydroxy-pyridyl-4′ azo)benzene-4-arsonate (AHP-4A) complexed with mercury(II) has been used for the determination of 0.13–1.46μg/ml of cyanide ions with fair accuracy. The anion has also been determined, when cyanide ion reacts with mercury(II)-(AHP-4A) complex, probably forming a bridged complex. The increase in absorbance is proportional to the cyanide ion concentration in the range of 0.04–0.37μg/ml, but this method is not very precise. The effect of foreign ions has also been studied. The sensitivities of other mercury(II) complexes in the determination of cyanide ions have been compared.

    Notes: Abstract Complex formation of indium(III) with three disubstituted pyridines, viz., 2,3-dihydroxypyridine, 2-amino-3-hydroxypyridine and 3-hydroxypyridine-2-thiol has been studied polarographically (μ=0.1; temp.=25±0.1°C). Dioxan bei 30±1°C unter Konstanthaltung der Ionenstärke (0,1M-NaClO4) bestimmt. Folgende Reihung wurde gefunden: $$UO_2 〉 Cu 〉 Ni \geqslant Fe 〉 Co 〉 Pb 〉 Zn 〉 Cd 〉 Mn.$$ Der stabilitätsbeeinflussende Effekt von π-Donor-Bindungen (Metall—Ligand) wurde nachgewiesen. Effekte von elektrophilen und nucleophilen Zentren innerhalb der Liganden wurden mit Stabilitätskonstanten der Chelate und Dissoziationskonstanten der Säuren korreliert.
    Notes: Abstract Stability constants of transition-metal chelates of 1,3-disubstituted 5-hydroximino-hexahydropyrimidine-2,4,6-trione [diphenyl violuric acid (DPhVA) and di-o-,m-, andp-tolyl violuric acid (DiToVA)] have been determined in 75% dioxane (aqueous) at 30±1°C, in solutions containing an excess of the ligand at ionic strength 0.1M-NaClO4. The order of formation constants found is: $$UO_2 〉 Cu 〉 Ni \geqslant Fe 〉 Co 〉 Pb 〉 Zn 〉 Cd 〉 Mn.$$ The stability influencing effects of donor π-bond (metal to ligand) has been demonstrated. The effects of electrophilic and nucleophilic centres within the ligand have been correlated to stability constants and acid dissociation constants.
