    Notes: An untrained panel of approximately 100 people was used to evaluate the importance of differences in fryer chicken toughness that result from differences in chilling time before freezing. The panel discriminated and criticized toughness that could arise in commercial practice. At least 4 hr of aging is desirable even for birds that are thawed before being cooked. Shear resistance of fried meat measured with Warner-Bratzler and L.E.E.-Kramer shear apparatus correlated well, and correlated with untrained-panel evaluation. Adverse comments on toughness and dissatisfaction with the quality of the chicken increased with increase in shear resistance of the meat.

    Notes: Breast and thigh meat of nine-week-old fryers from a commercial source was processed as frozen or freeze-dried raw or cooked meat. Objective methods were compared with sensory evaluation of texture and juiciness differences in the meat. The effect of freezing temperature (-23° and -191°C) on the quality of freeze-dried poultry meat and the differing effect of freeze drying on raw and cooked breast and thigh meat were also determined.Freeze-dried chicken meat was readily distinguished from frozen. Freeze-dried meat had poorer texture and less juiciness, higher shear resistance, and more expressible liquid than frozen. Cooked chicken meat had significantly higher shear resistance (Allo-Kramer and Instron) after freeze-drying than after freezing. The shear resistance tests agreed well with panel judgments of texture and could be substituted for them. However, for meat that was frozen or freeze dried before cooking, the differences in shear resistance were not consistently significant. Freeze-dried breast meat had larger amounts of expressible liquid (Succulometer) than the frozen. For breast meat this objective test agreed well with panel judgments of juiciness and could he substituted for them. Although the panel consistently distinguished differences between frozen and freeze-dried thigh meat, little or no liquid could be expressed from any of the thigh meat; thus the test could not be substituted for the panel judgments. No significant differences in “water-holding capacity” (Grau-Hamm press) were found between frozen and freeze-dried meat; this test could not be substituted for the panel tests under the conditions used.Freezing temperature (-23° and -191°C) had no significant effect on meat freeze-dried before cooking. The freezing temperatures resulted in detectable differences in meat freeze dried after cooking, but the differences were too small to be of practical importance.Freeze drying adversely affected breast more than thigh. The breast meat was less tender and juicy, and had higher shear resistance, and more expressible liquid.Meat cooked after freeze drying had better texture and juiciness, lower shear resistance, and less expressible liquid than meat cooked before freeze drying.

    Notes: A general method of dividing and subjectively evaluating the fractions of cooked chicken aroma was developed. The fractions were separated by passing nitrogen gas laden with the freshly formed aroma through solid absorbents or solutions of metal salts. The unabsorbed effluents were then characterized or identified in terms of the dominant odor by a trained panel. Absorbents were selected for their ability to permit passage of easily identified aroma fractions and for their general inability to form, react with, or concentrate on a volume basis the unabsorbed fractions of interest. The role of hydrogen sulfide was established in two ways: 1) when essentially all aroma constituents except hydrogen sulfide were removed from the nitrogen stream by anhydrous calcium sulfate (or calcium chloride or calcium carbonate), the residual aroma was easily recognized as hydrogen sulfide; and 2) when hydrogen sulfide was removed by any of a variety of heavy metal salts, a completely foreign disagreeable aroma remained that indicated the blending or masking effect of the hydrogen sulfide. When hydrogen sulfide and other components were removed by magnesium oxide, an ammoniacal odor characteristic of ammonia or aliphatic amines was exposed. Many absorbents or combinations of absorbents were found that trapped all fractions of the cooked chicken aroma.

    Notes: SUMMARY: Relations between maximum shear resistance and cross-sectional dimensions were established for cooked turkey meat samples of various shapes and sizes with a Warner-Bratzler type shearing device mounted in an lnstron tensile tester. The resistance to shear was proportional to the equivalent diameter raised to a power of about 1.2, over a wide range of sizes, shapes and intrinsic toughness. Degree of compaction before shearing was significantly correlated (r= 0.65, significant at 0.1% level) with the force at first failure per unit of equivalent diameter, and the compaction naturally increased with increasing intrinsic toughness. These data will permit comparison of shear force measurements from meat samples of different sizes and shapes.

    Notes: Summary 1. The first culminating point of girls involved in sexual delinquency as compared with 1958 (12 years of age) has been shifted to girls of younger age, and precisely to 9 years old girls. This coincides with the results of recent researches made byMatthes. 2. The number of deflowered girls in definite age groups has highly increased and has likewise been shifted to younger age groups. 3. Gynaecological examinations are — according to our opinion — almost indispensable. Attention has to be paid to possible provocations from the children — even to accomplished sexual intercourse. 4. Our material shows that the two apices of the curve of the perpetrators named to us as classified according to age have been shifted outward, since 1958, towards younger as well as older age groups.

    Notes: Abstract The influence of free carriers on the optical constants of Bismuthtriselenide Bi2Se3 was investigated in the infrared (2–23 μm). The reflection and transmission ofn-type Bi2Se3 single crystals was measured at approximately 30, 80 and 300 °K. Up till now,p-type Bi2Se3 is not known. The dependence of the refraction index and the absorption constant on the wavelength was calculated from the results of the measurements. It was found that the optical constants strongly depend on the carrier concentration. The crystals were prepared according the bridgman method. They normally have a carrier concentration of about 1019 cm−3, which can be diminished by annealing in Selenium vapour of various pressure up to 1018 cm−3. Bismuthtriselenide is a degenerated semiconductor. We obtained for the optical energy band gap by extrapolation the value 0,21 eV. It increases with increasing carrier concentration. This is known as the Burstein-Moss-effect.

    Description / Table of Contents: Summary At first are communicated the Y/X-values of the characteristics Gma and Gmx applicable to calculations biostatistics. From 517 cases with 638 included men we found out 77=12.07% decisions biostatistics: 8.62% positive and 3.45% negative. The number of calculated decisions grows up with the increasing number of hereditary serological characteristics. — 242 calculated cases were compared to the belonged judgments. From thex cases only 1 was contradictory. — 105 calculated cases were compared to the belonged judgements and anthropological decisions. From this cases 9 contradicted the biostatistical calculations. — Conclusive data are given to use the biostatistical calculations fromEssen-Möller in practice.

Die Zahl der rechnerisch gewonnenen Entscheidungen wird mit steigender Anzahl serologischer Merkmal-Systeme größer. — 242 Fälle konnten mit dem Gerichtsurteil verglichen werden. Davon widersprach nur ein Urteil unseren Berechnungen.     Description / Table of Contents: Summary It is known, that by (until now experienced) destining of hereditary blood- and serum-characteristics 83% of not biological fathers can be excluded. In our last expert opinions could serological excluded 562 from 1200 for fathership tested men. On a smaller material (398 expert opinions with 618 participiated men, from whose could serological excluded 298 men) were the hereditary characteristics in the MNSs-System on the top of the marks, who made our serological exclusions.
    Notes: Zusammenfassung Es ist bekannt, daß durch die heute routinemäßig untersuchten erblichen Blut- und Serummerkmale 83% aller zu Unrecht als Erzeuger in Anspruch genommenen Männer serologisch ausgeschlossen werden können. In der Gutachtenpraxis werden Blutproben von biologischen Vätern und Nicht-Vätern untersucht. An unserem Institut wurden von 1200 — als Vater in Anspruch genommenen — Männern 562 serologisch ausgeschlossen. An einem kleineren Material (398 Gutachten mit 618 beteiligten Männern, von denen 298 serologisch ausgeschlossen werden konnten) lagen die Eigenschaften im MNSs-System mit 28,2% an der Spitze der Merkmale, durch die unsere Ausschlüsse hervorgerufen wurden.
