Zusammenfassung Kalzium ist für die Knochenbildung und-erhaltung und somit für die Osteoporoseprävention wesentlich. Deshalb ist es im Hinblick auf die Volksgesundheit wichtig, das durch Nahrungsmittel aufgenommene Kalzium einer Bevölkerung genau zu kennen. Die Studie kombiniert die Daten zweier Umfragen zum Ernährungsverhalten in der Bevölkerung für die Westschweiz und den Kanton Tessin (MONICA, 1988–1989, und Genf 1991). Personen einer Zufallsstichprobe im Alter von 35 bis 64 Jahren äusserten sich aufgrund eines selbstausgefüllten Fragebogens zu den in den letzten 24 Stunden eingenommenen Nahrungsmitteln (MONICA, N=2734) oder haben auf eine telephonische Befragung geantwortet (Genf, N=475). In allen vier Kantonen kommt die Einnahme von Milchprodukten — vor allem Vollmilch und Käse — sehr häufig vor (60% aller Befragten). Der tägliche Milchkonsum liegt bei 3–4 dl. Ein nicht unbeträchtlicher Anteil der Westschweizer und Tessiner (10%) nahmen am Vortag überhaupt keine Milchprodukte zu sich. In Genf liegt die mittlere tägliche Einnahme von Kalzium bei 656 mg für Männer und 489 mg für Frauen. Ergebnisse der Studie sind: 1) Konsumgewohnheiten bezüglich kalziumreicher Nahrungsmittel unterscheiden sich nur unwesentlich von Kanton zu Kanton; 2) Frauen nehmen zwar etwas häufiger als Männer kalziumreiche Nahrung zu sich, tun dies jedoch in kleinen Mengen. 3) Für die Mehrheit der Frauen (80%) und der Männer (60%) ist die tägliche Kalziumzufuhr ungenügend, wenn man sich auf die Empfehlungen zur Osteoporoseprävention beruft.
Abstract:
Summary Food intake high in calcium content is important in the development of skeleton and the prevention of osteoporosis. From a public health perspective, it is therefore important to know the dietary calcium intake of a population. Two population surveys in the French and Italian parts of Switzerland (MONICA, 1988–1989, and Geneva, 1991), were combined to study nutritional habits related to calcium intake. A random population sample, aged 35 et 65 years, answered to a 24 hour recall questionnaire, either self-administred (MONICA, cantons of Vaud, Fribourg and Tessin, N=2734) or by phone (canton of Geneva, N=475). In the 4 cantons, for the previous day, 60% of participants ate dairy products, particularly whole milk and cheese. They drunk 3–4 dl/day of milk. A significant proportion (10%) of french and italian speaking Swiss did not consume any food high in calcium content. In Geneva, the mean daily calcium intake was 656 mg in men and 489 mg in women. In conclusion 1) eating habits related to calcium intake are similar across cantons; 2) women consume dairy products more frequently than men, but in smaller quantities; 3) about 60% of men and 80% of women do not get the daily amount of calcium recommended for the prevention of osteoporosis.

Résumé La consommation de calcium est essentielle pour le développement et le maintien du squelette osseux. D'un point de vue de santé publique, il est donc important de connaître les apports alimentaires en calcium d'une population. Nous avons pour cela associé les données de deux enquêtes alimentaires dans la population de suisse romande et du Tessin (MONICA, 1988–1989, et Genève, 1991). Un échantillon aléatoire de la population générale âgée de 35 à 65 ans a répondu à un questionnaire alimentaire de «rappel des 24 heures» auto-administré (MONICA, cantons de Vaud, Fribourg et Tessin, N=2734) ou téléphonique (canton de Gèneve, N=475). Dans ces 4 cantons, la fréquence de consommation lors du jour précédent de produits laitiers, surtout le lait entier et le fromage, est importante (60%). La quantité de lait consommée par jour est de 3–4 dl. Une proportion non négligeable (10%) de suisses romands et tessinois n'ont consommé aucun produit laitier la veille. A Genève, la moyenne du calcium quotidien provenant des produits laitiers est de 656 mg chez les hommes et de 489 mg chez les femmes. Nos résultats montrent que 1) les habitudes alimentaires relatives aux aliments riches en calcium sont similaires entre les cantons étudiés; 2) les femmes consomment légèrement plus fréquemment, mais en moins grande quentité que les hommes, des produits riches en calcium 3) environ 60% d'hommes et 80% de femmes ont un apport quotidien en calcium insuffisant selon les recommandations pour la prévention de l'ostéoporose.
