Using an extracellular β-fructosidase, inulase, which hydrolyzes β-2: 1′-linked fructose polymers, 90% of the total sugar in the extract of Jerusalem artichoke tubers were hydrolyzed to free sugars which consisted of 77% fructose and 23% glucose. Fructose in the hydrolyzate was separated by Dowex 1-X8 ion exchange chromatography and was obtained with overall recovery 61%.
