Soluble high molecular weight (M.W.) and insoluble impurities impure and refined cane sugar were isolated by membrane and ultrafiltration. The utrafiitration retentates were mostly insoluble. Soluble high M.W. materials were composed largely of polysaccharides, with a trace to a few percent of proteins and phenolics. Analysis of acid hydrolyzed retentates from refined sugar by high-pressure-liquid chromatography showed only glucose. In raw and washed mill sugars, arabinose, xylose, galactose, ribose and fructose were also identified. Isolated acid beverage floes were found to contain mainly polysaccharides.
