Pyrolysis-mass spectrometry (Py-MS) is an analytical fingerprinting technique which, coupled with suitable multivariate data analysis procedures, offers a rapid method for characterizing juice. The technique was demonstrated to be capable of differentiating/discriminating between the majority of orange juices from two different sources (Israel and Brazil) and between processors within a single country illustrating the potential of Py-MS to the problem of orange juice authentication.
