    Notizen: The microbiological, sensory and physicochemical changes in precooked chilled pork were measured over 8 days storage at 1°C and 5°C. Microbial growth was limited, but marked sensory and physicochemical changes occurred within the 5-day period currently recommended as the maximum storage time in the DHSS guidelines on precooked chilled foods (DHSS, 1980). At 1°C, marked toughening occurred after only 1 day; whilst at 5°C adverse flavour and odour changes were noticeable by the fourth day of storage. The amount of volatile compounds, especially n-hexanal, stripped from the pork increased significantly over the 8-day storage period, particularly at 5°C.

    Notizen: A panel of experienced assessors was used to test the effect of irradiation at 2.5kGy (250krad) on the sensory quality of 1-day and 21-day-old turkey breast fillets stored at 1°C in either oxygen-permeable polythene or an oxygen-impermeable barrier film. In the application of Free Choice Profiling and Generalized Procrustes Analysis, assessors used their own terms to describe the appearance, odour and flavour of the samples.The irradiated samples showed negligible growth of micro-organisms across 21 days of storage. Radiation treatment resulted in an intense pink colour in the raw and cooked samples, which was maintained during storage in oxygen-impermeable film, but decreased in samples exposed to oxygen during storage. Radiation also produced a set of unpleasant raw odour notes variously described as sour, rancid, mature, bad meat or putrid in the samples stored in oxygen-impermeable film. These notes were unlike the sulphurous notes previously associated with protein denaturation in irradiated chicken and were apparently distinct from the odour notes that developed in corresponding non-irradiated samples.

    Notizen: A rotational fitting technique, previously described, has been applied to two sets of data from experiments involving sensory perception, to examine mutual relationships between the characteristics scored. In both cases, considerable insight has been gained into the way in which assessors scored the characteristics, which can be used as the basis for economy in designing future experiments of the same type.

    Notizen: A survey of members of the U.K. QSAR Discussion Group has been made to determine the extent of use and development of chemometric and artificial intelligence (AI) methods in the analysis of multivariate quantitative structure-activity relationship (QSAR) data in the U.K. Chemometric methods were found to be well established in both industrial and educational establishments and there was significant method development occurring. AI methods were not employed to any great extent and the general level of interest in these techniques was low compared to chemometric methods. A requirement for more education in multivariate statistical methods and regression methods was indicated. A need for a user-friendly, comprehensive, commercially available multivariate statistical package containing multivariate stability testing and regression diagnostic methods was identified.

    Notizen: A robust partial least squares (PLS) regression algorithm is developed. This is achieved by substitution of the univariate regression steps in the iterative PLS2 algorithm by a robust alternative. The angle between loading vectors from both perturbed and unperturbed solutions is used as a measure of robustness. By means of a perturbation study on a structure-activity data set, it is demonstrated that the stability of the robust method is superior to standard PLS.
