    Notes: : The antimicrobial effect of 2% low molecular weight polylactic acid (LMW-PLA), 2% lactic acid (LA), 200 IU nisin (Nisaplin™)/mL, and combinations of nisin and each acid on Escherichia coli O157:H7 on raw beef was investigated. Fresh beef, inoculated with E. coli O157:H7 and treated with each solution, was vacuum packaged and stored at 4 °C for 28 d. At day 28, counts of samples treated with LMW-PLA, NPLA, LA, and NLA were significantly reduced to 3.13,2.91, 2.99, and 2.83 log10 CFU/cm2, respectively. However, the antimicrobial effect of LMW-PLA and LA was not significantly different from each other and Nisaplin did not enhance the effects of either acid against this organism.

    Notes: : The effect of nisin and nisin/EDTA followed by vacuum packaging on the reduction of Brochothrix thermosphacta and Salmonella typhimurium counts on beef was investigated. Beef cubes, inoculated with either bacteria, were dipped in nisin, or nisin combined with EDTA solutions, vacuum packaged, and stored at 4 °C for up to 25 d. Growth of B. thermosphacta was completely inhibited by nisin and nisin/EDTA by up to 6.76 log10 CFU/ml. However, neither treatment showed significant effects against S. Typhimurium. Thus, nisin or nisin/EDTA treatment, followed by vacuum packaging under refrigerated conditions could increase the shelf life of fresh beef by inhibiting the growth of B. thermosphacta, an important spoilage organism in beef.

    Notes: : Live cells of Bifidobacterium longum, microencapsulated in K-carrageenan, were added to stirred yogurt after fermentation (pH 4.6) and stored at 4.4 °C for 30 d. Cell enumeration indicated no decline of encapsulated cell number in yogurt samples, while there was significant reduction in nonencapsulated cell population (89.3% for B. longum B6 and 91.8% for B. longum ATCC 15708). Ion-exchange high-performance liquid chromatography showed comparable amounts of lactic and acetic acids in all samples, indicating little metabolic activity by bifidobacteria in experimental yogurts. Consumer sensory analysis of blackberry-flavored yogurts revealed that samples containing encapsulated bifidobacteria had a grainy texture. Results suggested that microencapsulation protected bifidobacteria from the low pH of yogurt.

    Notes: : The efficacy of 2% molecular weight 240, 2% molecular weight 360 polylactic acid (PLA), and an equal mix of both at reducing numbers of Escherichia coli O157:H7 and Lactobacillus plantarum on raw beef was determined. Fresh beef cubes inoculated with either organism were dipped in PLA solutions or wrapped in PLA-sprayed films. Samples were vacuum packaged and stored at 4°C for 42 d. Treated samples maintained a significantly lower pH than controls. Growth of E. coli O157:H7 was totally inhibited by both PLA treatments by up to 7.29 log10 CFU/cm2 when the spray method was used. However, PLA treatments against L. plantarum were not very effective.

    Notes: The organic acids profile in fermented dairy foods is an indicator of the metabolic activity of added bacterial cultures. These acids act as natural preservatives and contribute to the characteristic sensory properties. This study was done to determine the effect of encapsulation on the metabolic activity of probiotic supplements, i.e. bifidobacteria, in plain yogurts. Metabolically active bifidobacteria may increase the concentration of certain organic acids, mainly acetic and propionic acids, which might lead to decreased acceptability of the product. Changes in the profiles of organic acids were determined in plain set and stirred-type yogurts containing the starter culture and microencapsulated and nonencapsulated probiotic strains of either Bifidobacterium longumB6 or B. longum ATCC15708. Ion-exchange high-performance liquid chromatography was used for the separation and quantification of the organic acids. Concentrations of acetic and lactic acid increased during storage, while those of citric and uric acid remained stable. No particular pattern was observed for propionic or butyric acid, while pyruvic acid initially decreased and then increased during storage.

    Notes: Abstract The study includes 17 infants with nephrotic syndrome. Their ages at the onset of disease ranged from 10 days to 10 months (median 2 months), and included 10 males and 7 females. Ten patients had consanguineous parents and 4 had a history of similar illness in the sibling. Renal biopsy revealed diffuse mesangial proliferation in 10 patients, diffuse mesangial sclerosis in 3, Finnish microcystic disease in 2, and focal segmental glomerulosclerosis and atypical glomerulopathy in 1 each. Unilateral nephrectomy was performed in 8 patients with intractable proteinuria associated with multiple complications. Five are well after 4–36 months follow-up, 1 died of septicaemia soon after the procedure, 1 needed dialysis and is stable at 26 months and 1 showed no reduction in the degree of proteinuria. We conclude that unilateral nephrectomy is a better alternative to bilateral nephrectomy in some infants with severe nephrotic syndrome.

    Notes: Abstract The study includes 150 children with primary nephrotic syndrome (NS), aged 16 months to 13 years with a median age of 5 years. The male to female ratio was 2:1 and the familial occurrence was 6%. Amongst 48 biopsied patients, 19 (39%) had focal segmental glomerulosclerosis, 17 (35%) had diffuse mesangial proliferative glomerulonephritis (MesPGN) and 10 (21%) had minimal change nephropathy. About 90% of patients responded to the initial prednisolone therapy. Subsequently 45% of steroid-sensitive patients had frequent relapses, 23% had no relapses, 21% had infrequent relapses and 5% became steroid resistant. Saudi children with primary NS showed no differences as regards age at onset, male predominace and response to initial prednisolone therapy when compared with published data from other countries. However, the higher incidence of familial occurrence, the relatively high frequency of MesPGN, the rarity of infection-related NS and a decreasing incidence of serious infections with improving socio-economic status were all noteworthy.
