    Notes: Abstract In the People's Republic of China there are wide regions where many people suffer from strong selenium deficiency. In order to elucidate the possibilities to compensate this state of need by the national drink, the selenium contents of 31 tea samples from nine provinces of the PR China were determined by hydride generation atomic absorption spectrometry (HG-AAS). The Se contents of the ten analyzed tea samples from one region with soils containing high selenium amounts range from 83 ng/g to 7530 ng/g. These results are in contrast to the Se contents of the remaining tea samples from other regions, which range from 28 to 573 ng/g. The extractible part of selenium in the tea drink ranges between 7% and 27% without significant difference among different tea samples. The accuracy of Se determination was tested by using one tea standard reference material. The daily consumption of one “Se tea” examined in this study assures that people who suffer from a Se deficiency resume enough of it. Drinking normal quantities of this tea an intoxication by Se is not to be expected.

    Description / Table of Contents: Zusammenfassung Bei der praxisnahen Begasung von Weizen mit radioaktiv markiertem Äthylenoxyd-1,2-14C (ÄO) zur Entwesung (ca. 85 mg/kg ÄO bzw. 65 mg/l) und bei verschiedenen Wassergehalten des Begasungsgutes findet man, daß unabhängig vom Wassergehalt ca. 85% des „gebundenen” ÄO in wasserlösliche Metaboliten übergeführt werden. Das „gebundene, gesamte ÄO” (ÄO + Metaboliten) liegt zwischen 14 bis 37,5 mg/kg Weizen. Die Verteilung der Radioaktivität bzw. des ÄO auf etwa 10 Stoffgruppen (wasserlösl., salzlösl. Proteine [Kleber], organ. Säuren, Mono-Oligo-Saccharide, Lipide, Lipoproteide, Stärke, Kleie) und ihre Abhängigkeit vom Wassergehalt werden mengenmäßig angegeben.
    Notes: Summary In fumigating wheat with radioactive Ethylenoxide-1,2-14C (EO) to exterminate vermin (85 mg/kg EO wheat or 65 mg/k EO volume apparatus) and with different contents of water in wheat we discover, that 85% of the bounded total EO are converted to water-soluble compounds. The total EO-residue (EO and metabolites) is of the order of 14 to 37,5 ppm. The distribution of the radioactivity resp. of the EO among 10 groups of substances (watersoluble, water-insoluble Proteins [gluten], org. acids, mono-oligo-saccharides, lipids, lipoproteids, starch, bran) and its dependence on water content of wheat are quantitatively specified.

    Description / Table of Contents: Zusammenfassung Es wird der Trennungsgang für die durch ÄO-1,2-14C markierten Inhalts stoffe und die Verteilung der Radioaktivität auf 9 Stoffgruppen angegeben, die durch Extraktion, Säulenchromatographie und Fällung gewonnen wurden. Wie bei Weizen [1] findet sich die Radio aktivität zu einem großen Teil im Wasserextrakt und hier in den niedermolekularen Verbindungen.
    Notes: Summary A procedure based on extraction, column chromatography and precipitation is described for the separation of ethylene oxide-1,2-14C fumigated coca-powder derivatives in 9 different groups. As it was found in wheat [1], the major portion of radioactivity lies in water extract; in coca-powder the major portion of radioactivity is also found in low molecular components.

Die Konzentrationen liegen ungefü:hr bei 20 bzw. 50 mg/kg Kakaopulver.
    Notes: Summary In Coca-powder fumigated with Ethylene Oxide-1,214C, several derivatives were isolated by extraction and preparative Thin Layer Chromatography. Of the two compounds isolated from the water-extract, the structures have been suggested asN,N-Bis-(Di-Ethoxy-O-Hydroxy-ethyl)-Isoleucyl-Alanyl-Cysteine (MW = 569) andN-(Ethoxy-O-Hydroxyethyl)-Tyrosine (MW = 269), based on I. R. and Mass Spectrometry. Their approximate concentrations were found to be 20 and 50 mg/kg respectively.

Cu2+ inaktiviert die Reaktion. In diesen Punkten entspricht das Enzym anderen unterschiedlicher Herkunft. Neu ist der aktivierende Effekt von NaCl mit einem Aktivitätsoptimum bei 0,6 mol.
    Notes: Summary The Isoenzymes ofl-Ascorbic Acid Oxidase, isolated and separated according to [1] exhibit a maximum activity withl-Ascorbic Acid in the pH range 5,4–6,0 with temperature optima of 30, 39 and 40°C. Cu2+ inactivates the reaction. In this property the enzyme corresponds to other enzymes of different origin. The activating effect of NaCl with optimum activity near 0,6 mol concentration has not been described previously.

Unter normalen Begasungsbedingungen reagieren 14%–21% des Theobromins.
    Notes: Summary 4 derivatives of theobromine from cacao powder fumigated with ethylene oxide (250–1000 g/m3 EO, 20 °C, 6 h) were isolated by extraction with chloroform, polyamide chromatography and thinlayer chromatography. Based on UV- and Mass Spectrometry the structure suggested is 1-(2-hydroxyethyl-)theobromine (derivate 1) and higher Glycolether-derivatives with an oligomerisation degree up to n=4. Under normal fumigation conditions 14–21% of theobromine is reacting.

Standardabweichung: ÄOs = ± 1,70 ppm (N = 24, Konz. B. 10 ppm), ÄCHs = ± 1,15 ppm (N = 24, Konz. B. 20–30 ppm), ÄGs = ± 0,62 ppm (N = 24, Konz. B. 15–30 ppm).
    Notes: Summary The not comminuted grain (10 g) is extracted for 24 hrs (25° C) with 5 ml methanol (shaking machine), then the fluid phase is separated by centrifugal filtration and directly injected into the GC (10 μl). Scudamore [1-4] durch die Trocknung des acetonischen Extraktes mit NaCI und CaCl2 site. große Mengen (bis 800%) Äthylenchlorhydrin (ÄCH) aus Äthylenoxid (ÄO) gebildet werden, die ursprünglich nicht vorhanden sind. Dagegen geht in Lebensmitteln vorhandenes Äthylenglykol (ÄG) (als Metabolit von ÄO) verloren, indem sich einerseits ÄG in der CaCl2-Phase löst, andererseits mit Aceton indas entsprechende Ketal übergeführt wird. Die Methode [1-4] erscheint daher zur Bestimmung von ÄO, ÄCH und ÄG nicht geeignet.
    Notes: Summary By drying acetonic extracts with NaCl and CaCl2 according to the method of Heuser and Scudamore [1-4], large amounts (up to 800%) of Ethyleneehlorohydrine (ECH) originally not existing, are formed of Ethyleneoxid (EO). However Ethyleneglycol (EG) as a metabolite of EO in food is lost, whereas on the one hand EG dissolves in the CaCl2-phase, on the other hand EG is transferred to the corresponding ketal. Therefore this method [1-4] does not seem to be qualified to determine E0, ECH, and EG.

    Notes: Summary Ten different kinds of dry food were fumigated with 10 g/m3 of 1-14C-Acrylonitrile (AN, 24h, 20°C). Residues of 0–19 mg/kg AN were found by Liquid-Scintillation-Spectrometry. The values become smaller as the density of the material increases. 30–70% of this agent are metabolised within two months.
