One of the main components of grading veal carcasses is color. A commercially altered, light-weight and portable color meter is discussed. The color is numerically expressed in CIE (International Commission on Illumination) units, which are (x, y) chromaticity coordinates and illuminance Y. As the color meter is placed on the carcass, the light reflected from the meat is detected by three detectors. Each detector has a different filter red, green, and blue providing three separate spectral signals. From these signals a microprocessor calculates the chromaticity corrdinates and illuminance. The instrument is provided with an easy means of calibration. It is designed to be used for four hours of continuous operations, before the batteries need to be recharged.
