    Notes: Osmotic syrups can be reconcentrated and reused for osmotic water removal through at least five complete cycles without adversely affecting the fruit being concentrated, even though the properties of the osmotic medium do change. Syrup penetration rate into a fruit piece was faster with high fructose corn syrup (HFCS) than sucrose. Taste panel evaluation indicated that overall, sucrose was preferred as an osmotic medium over HFCS.

    Notes: A dry-steam-dry process was used to make a crisp French fry from mash potatoes without additives. The times and conditions for drying, steaming and drying were varied and evaluated to get an organoleptically acceptable product. Long cooking times, high pressures and shearing actions that caused cellular damage and release of free starch were detrimental to the process and product. Compared with the commercially available product, the extruded French fry is more crisp, fries in a shorter time, absorbs less oil, has more natural potato flavor and has an excellent “plate-life.’ Other comparisons showed the process utilized less raw material and produced more strips and servings than was possible with the commercial process and product.

    Notes: We describe instrumentation for forming two-dimensional arrays of polymer microparticles produced from electrodynamically focused microdroplet streams. A single-stage linear quadrupole was used to focus droplets/particles onto silanated glass slides mounted on a computer-driven two-dimensional translation stage. Center-to-center position stability was on the order of 1 μm. Applications to molecular sorting with polymer particles as host carriers are discussed. © 2000 American Institute of Physics.

    Notes: Commercial scale ceramic microfilters were used in plant tests to determine flux rate and operating parameters for waters from a poultry scalder, a poultry chiller, and brine from a delicatessen products chiller, under commercial conditions. Filtration produced clear permeate from all waters. Microorganism counts were essentially reduced to zero in scalder and chiller water permeates, with BOD reduced by about 70% in scalder water permeate and about 60% in chiller water permeate. Flux rates were in the range of 224-204 L/m2h for scalder water at 54°C and 114-81 L/m2h for chiller water at ambient temperature. Test results were used to project nonlabor operating savings and/or costs resulting from the use of microfiltration to recondition and reuse bath overflow. For a processing rate of 140 birds/min and bath size of 37,850 L (10,000 gal), an annual savings of $21,000-$26,000 were estimated for scalder water filtration, while annual costs of $65,000-$84,000 were estimated for chiller water filtration. For a deli brine bath size of 1,170 L (300 gal), annual costs of about $700 were estimated. Retentate heating and electrical usage associated with centrifugal filter pumps were projected as predominant cost factors. Besides costs, other factors such as nonchemical control of microbial growth, water savings, and reduced discharge levels may also be important reasons for considering microfiltration.

    Notes: This article develops the theoretical foundation for the temperature–entropy (T–s) diagram for irreversible absorption chillers that employ either a volatile or nonvolatile working pair. The representation of a real absorption refrigeration cycle on a T–s diagram can directly depict the energetic superiority of one design over another. For practical usage, this diagrammatic approach only requires as inputs the inlet and outlet state points that can be computed based on the corresponding temperatures, pressures, and component concentrations of each of the heat-and-mass exchanger modules within a chiller system and can therefore also be employed as a useful tool for system analysis and diagnosis. The same method is also applicable to any continuously operating thermodynamic system that is wholly or partially driven by thermal power. © 2000 American Institute of Physics.

    Notes: This article presents a general thermodynamic framework for the temperature-entropy (T-s) diagram of batchwise operating thermodynamic cooling cycles. Our approach is fully consistent with the rigor of classical thermodynamics and captures accurately characteristics of cyclic-steady-state performance of a batchwise operating cooling cycle. The Eulerian viewpoint is adopted to allow for a time invariant description of such a cycle on a T-s plane, and this results in the formation of close loops at all internal energy storage components and their connection(s). © 2001 American Institute of Physics.

    Notes: The thermodynamic behavior of conventional chillers (generalized air conditioning and refrigeration systems) is acutely sensitive to internal dissipation. Previous chiller analyses have excluded entropy production in the evaporator and condenser heat exchangers, on the assumption of its being negligible. With experimental measurements from a commercial chiller, we demonstrate that heat exchanger internal dissipation is not inconsequential, and that ignoring its contribution can lead to substantial errors in chiller diagnostics and in the prediction of chiller performance curves. To evaluate the impact of this dissipation on chiller efficiency, one needs to define a proper process average temperature (PAT). In addition to discussing the fundamental significance of the correct PAT, we will show that earlier conventional definitions of PAT, where internal irreversibilities in chiller heat exchangers have been overlooked, result in inaccurate and sometimes unphysical predictions. © 1998 American Institute of Physics.
