Summary During the years 1969–1971 experiments on the effect of increasing and staggered applications of nitrogen were carried out at four sites on the Munich gravel plain (Münchner Schotterebene) with the varieties Maritta and Tasso. Tuber samples from different manurial treatments (Tables 1 and 3) were stored at 2 and 6°C, subsamples were then reconditioned at 20°C for three weeks and the content of reducing sugars and saccharose determined. In addition, an analysis was carried out immediately after harvest. Nitrogen applications of 120, 240 and 360 kg/ha had no effect on the total sugar content (reducing sugars+saccharose) (Table 5). The reducing sugar content in Maritta stored for 30 weeks at 2°C was significantly decreased by dressings of 240 and 360 kg N/ha. This did not affect the processing quality. A similar decrease was found following the other storage treatments and ‘after harvest’; the differences were, however, not statistically significant. In the variety Tasso this applied to all storage treatments and the samples taken directly after harvest (Table 6). A significantly higher total sugar and saccharose content was found in Maritta than in Tasso. This did not affect the processing quality (Table 7). Samples taken from the 1970 crop showed a significantly higher content of both total sugars and saccharose than did those from the 1971 crop (Table 7). Random differences in sugar content related to site occurred but were not statistically significant (Table 7). The mean of five storage treatments, two varieties, two years and four sites showed a reducing sugar content 1.40% (dry wt) after an application of 120 kg N/ha and 1.22% following applications of 240 and 360 kg N/ha, respectively The difference was significant (Table 7). A further experiment on nitrogen manuring with increasing and different staggered N-applications showed, when the mean of five storage treatments, two varieties and two years was taken, differences in reducing sugar content of 1.13–1.40% (dry wt) (Table 8). The differences between treatments 1,4 and 6 were statistically significant. From the results it can be concluded that applications of mineral N influence the sugar content of tubers to such a limited extent that no detrimental effect on their suitability for processing is likely.
Abstract:
Résumé Au cours des années 1969–1971, on a exécuté des recherches avec doses croissantes et graduées d'azote en quatre endroits sur les sols à cailloux plats de Munich avec les variétés Maritta et Tasso. Les tubercules échantillonnés des diverses variantes de fumure (tableaux 1 et 3) furent conservés à 2 et 6°C, après quoi une partie des échantillons reconditionnée à 20°C pendant trois semaines et examinée pour les teneurs en sucre réducteur et en saccharose. En outre un examen fut fait immédiatement après la récolte. La fumure azotée de 120, 240 et 360 kg N/ha s'est révélée n'avoir pas d'influence sur la teneur en sucres totaux (sucre réducteur+saccharose) (tableau 5). Chez la variété Maritta, après 30 semaines de conservation à 2°C, la teneur en sucre réducteur était nettement diminuée avec les doses de 240 et 360 kg N/ha par rapport à 120 kg N/ha. La valeur d'utilisation n'était pas influencée par ce fait. Chez les autres variantes de conservation et à la récolte, la teneur en sucre réducteur était également diminuée; les différences n'étaient cependant pas statistiquement assurées. Le même phénomène s'observait pour toutes les variantes de conservation et au moment de la récolte chez la variété Tasso (tableau 6). La variété Maritta montrait une teneur certainement plus élevée en sucres totaux et en saccharose que la variété Tasso. La valeur d'utilisation n'en était pour autant amoindrie (tableau 7). Les tests de l'année culturale 1970 ont donné une teneur certainement plus élevée en sucres totaux et en saccharose que l'année culturale 1971 (tableau 7). Les différences dans les teneurs en sucres des tubercules relatives à l'endroit cultural étaient accidentelles et non assurées statistiquement (tableau 7). Dans le cas de 5 variantes de conservation de deux variétées et de deux années culturales, la teneur en sucre réducteur était avec la fumure de 120 kg N/Ha, de 1,4% de la matière sèche, et avec 240 et 360 kg N/ha de 1.22%. La différence n'était pas statistiquement certaine (tableau 7). Dans une recherche ultérieure sur fumure azotée avec diverses doses croissantes et échelonnées de N, avec 5 variantes de conservation, deux variétés et 2 années culturales, les différences dans la teneur en sucre réducteur variait de 1.13 à 1.4% de la matière sèche (tableau 8). Les différences entre les variantes 1, 4 et 6 étaient statistiquement valables. On peut conclure de ces résultats que l'influence de la fumure minérale azotée sur la teneur des tubercules en sucres est si faible qu'elle ne peut avoir aucune influence sur la valeur d'utilisation.

Zusammenfassung Stickstoffsteigerungs- und staffelungsversuche, die von 1969–1971 auf stark wasserdurchlässigen Böden der ‘Münchener Schotterebene’ durchgeführt wurden, führten nur zu geringfügigen Veränderungen des Zuckergehaltes in Kartoffelknollen. Gaben von 120 kg N/ha ergaben gegenüber 180, 240, 300 und 360 kg N/ha einen statistisch gesichert höheren Gehalt an reduzierenden Zuckern. Nach 30-wöchiger Lagerung bei 2°C waren die Unterschiede im Gehalt an reduzierenden Zuckern in Abhängigkeit von der Stickstoffdüngung stärker ausgeprägt als bei anderen, geprüften Lagervarianten. Die Sorte Maritta wies gegenüber der Sorte Tasso gesichert höhere Gehalte an Gesamtzuckern und an Saccharose auf. Der Verarbeitungswert beider Sorten wurde hierdurch nicht unterschiedlich beeinflusst. Knollenproben aus dem Anbaujahr 1970 hatten einen gesichert höheren Gehalt an Gesamtzuckern und Saccharose als die des Anbaujahres 1971. Der Verarbeitungswert wurde dadurch nicht verändert.
