    Notes: Examination of 12 commercial frozen bean packs showed two forms of color deterioration. The first resulted in conversion of chlorophyll to pheophytin, and the second caused destruction of both chlorophyll and pheophytin. It is shown that both forms of degradation may be related to the process of fat peroxidation. The conversion of chlorophyll to pheophytin may occur during the anaerobic initiation stage of fat peroxidation. Destruction may occur during the aerobic propagation stage.

    Notes: The growth of two strains of coagulase-positive Staphylococcus aureus was measured in whole and skimmilk and in broth at 5, 10, 22, 30 and 37° There was a continuous decrease in population in all media at 5°. The medium had little effect on the duration of the logarithmic growth phase which varied from 12 hr at 37° to 20 days at 10°. Typical generation times in whole milk varied from 1642 min at 10° to 45 min at 37°. At 10 and 22° there was no statistically significant difference in the generation times among media or between strains. At, 30 and 37° there was no significant difference between the generation times in skimmilk and whole milk, but the generation time was significantly shorter (at the 5% level) in the broth than in the milks. The cultures maintained a longer stationary growth phase and were more persistent in broth and skimmilk than in whole milk. More rapid decreases in population in the whole milk were attributed to the toxicity of fatty acids released by the lipase of S. aureus. The decline in pH of the substrate was approximately proportional to the increase in population.

    Notes: The effect of blanching on the conversion of chlorophylls to pheophytins and on their oxidation during the blanching and subsequent storage of green beans at -10° C was examined. Some conversion of chlorophylls to pheophytins occurred during blanching but there was no oxidation. During storage at -10 °C, both conversion and oxidation occurred. Two effects of blanching were distinguished: firstly, as enzymes were inactivated, the rates at which the chlorophylls underwent changes in storage at -10°C diminished; secondly, with blanch periods longer than necessary for inactivation of peroxidase and catalase the rates of chlorophyll change increased progressively during frozen storage. Under the blanching conditions used, a blanching period of 45 see to 1 min resulted in the most stable product.

    Notes: Avstract The moist mycelium ofT. tonsurans was extracted with 3 % w/v sodium hydroxide to yield a purple to violet solution which was passed through a cation-exchange resin column, evaporated partially, dialyzed and lyophilized. The lyophilized powder was extracted using absolute ethanol, acetone and chloroform (Process A) and separately by defatting with petroleum ether and n-hexane followed by chloroform-methanol 2:1 (Process B). Separation was achieved for the extract of Process B on thin layer chromatography using Silica Gel G and butanol-ethanol-water as the solvent system. Ultra-violet and visible spectrophotometric absorption data are reported for the lyophilized extract ofT. tonsurans, hydrolyzates of the lyophilized extract, and for sodium hydroxide extracts ofT. megnini, T. mentagrophytes, T. rubrum, T. tonsurans andT. violaceum. The spectra were similar in all cases. A review of pigment substance in dermatophytes is made, which together with the experimental data secured withT. tonsurans and previous experimentation, suggest the possible effects of drying procedures, contusion, solvents, acidic additives and method of extraction on the removal of pigment from the mycelium of dermatophytes. It is suggested that all the above conditions influence the substances ultimately extracted and that some alteration of a basic pigment association in the organism occurs to release pigment fragments or fractions of varying complexity. Oxidation and polymerization may influence the end result. It is possible that the mechanism presented can account for the number of pigment substances reportedly occurring in the dermatophytes and that a similar pigment structure or complex exists in other Trichophyton species.
