    Notes: Abstract. The mechanism of the immunosuppressive effects of glycine and its pathophysiological applications are discussed in this review. Glycine has been well characterized in spinal cord as an inhibitory neurotransmitter which activates a glycine-gated chloride channel (GlyR) expressed in postsynaptic membranes. Activation of the channel allows the influx of chloride, preventing depolarization of the plasma membrane and the potentiation of excitatory signals along the axon. Glycine has recently been shown to have similar inhibitory effects on several white blood cells, including hepatic and alveolar macrophages, neutrophils, and lymphocytes. Pharmacological analysis using a GlyR antagonist strychnine, chloride-free buffer, and radiolabeled chloride has provided convincing evidence to support the hypothesis that many white blood cells contain a glycine-gated chloride channel with properties similar to the spinal cord GlyR. Molecular analysis using reverse transcription-polymerase chain reaction and Western blotting has identified the mRNA and protein for the β subunit of the GlyR in total RNA and purified membrane protein from rat Kupffer cells. Dietary glycine is protective in rat models against endotoxemia, liver ischemia-reperfusion, and liver transplantation, most likely by inactivating the Kupffer cell via this newly identified glycine-gated chloride channel. Glycine also prevents the growth of B16 melanomas cell in vivo. Moreover, dietary glycine is protective in the kidney against cyclosporin A toxicity and ischemia-reperfusion injury. Glycine may be useful clinically for the treatment of sepsis, adult respiratory distress syndrome, arthritis, and other diseases with an inflammatory component.

    Notes: : In vitro antioxidant and antibacterial protection of shallot and scallion were examined. Water extract and oil of shallot and scallion significantly delayed lipid oxidation in multilamellar phosphatidylcholine liposomes and human RBC membranes (p 〈 0.05). Shallot oil at 5 and 10 mM showed marked antioxidant activity at 75 °C (p 〈 0.05). Shallot and scallion oils significantly inhibited the growth of 4 food-borne bacteria, Salmonella typhimurium DT104, E.coli O157:H7, Listeria monocytogenes and Staphylococcus aureus, and 4 nosocomial bacteria, methicillin-resistant Staphylococcus aureus, Klebsiella pneumoniae, Pseudomonas aeruginosa and Acinetobacter baumannii (p 〈 0.05). All observed antioxidant and antibacterial activities were dose-dependent (p 〈 0.05). These results suggested the use of shallot and scallion oils in food systems could enhance lipid and microbial stability.

    Notes: Larvae of spring spawning Clyde herring Clupea harengus L. were reared at 5 and 12° C. Metabolism following burst swimming was studied in 7-day-old larvae at their respective rearing temperatures. Escape responses were repeatedly elicited using tactile stimulation for a period of 3 min. Larval herring were hard to fatigue and still responded to tactile stimuli after 3 min. Whole larvae were freeze-quenched in liquid nitrogen, either immediately after exercise, or after periods of recovery of up to 24 h. Samples were freeze-dried and analysed for whole body creatine (Cr), phosphocreatine (PCr), ATP, ADP, AMP, lactate, glucose, and glycogen using high performance liquid chromatography and enzymatic methods. The exercise regime resulted in a marked decrease in PCr, ATP and glycogen concentrations and an increase in creatine, glucose and lactate concentrations whereas there was no significant change in either AMP or ADP concentrations. The extent of phosphagen hydrolysis (approx. 110 to 15μmol PCr g −1 dry body mass) and lactate accumulation (approx. 7 to 40 μmol lactate g−1 dry body mass) over the exercise period was similar at the two temperatures, consistent with a relatively constant degree of effort. The rates of recovery of PCr and ATP were essentially the same at 5 and 12° C; returning to resting levels after approximately 30 min. Lactate and glycogen concentrations were restored 60 min after exercise at both temperatures. Maximum lactate clearance rates (1.2 μmol min −1 g −1 wet muscle mass) were an order of magnitude faster than reported for adult fish in the literature.

    Notes: Two different types of structure called X1 and X2 are existing in Y2SiO5 at normal conditions. In X1 type, Y3+ ions occupy two sites where they are surrounded respectively by nine and seven oxygen ions, while in X2 structure, only six and seven oxygen ions are involved. Nanometric scale X1-Y2SiO5 crystals were prepared by sol-gel method with particle size around 50 nm. Site selective excitation at low temperature has shown four different luminescent centers. Two of them belong to Eu3+ embedded in X1-Y2SiO5, the other two are attributed to Y2O3:Eu phase and to a particular site on the surface. The occurrence of the latter site may be related to the nanometric size of the sample. A pronounced excitation energy transfer from site 2 to site 1 was also observed on excitation spectra. The energy transfer rate increases rapidly with increasing Eu3+ concentration and for x=0.7 in Y2−xSiO5:Eux, no fluorescence takes place in site 2 at 15 K. The lifetimes of the 5D0 levels of Eu3+ in the two sites were measured as a function of Eu3+ concentration. The results have shown that the lifetime of the 5D0 level of Eu3+ in site 2 decreases with increasing Eu3+ concentration. The energy transfer rate dependence upon temperature was studied in detail and compared to a theoretical simulation. © 1999 American Institute of Physics.

    Notes: Chicken breast at 8%, 17% and 25% levels was used to replace pork fat in a low-fat dry Chinese sausage. This replacement resulted in more lipid and oxymyoglobin oxidation; also pH values declined (P〈0.05) during 4C storage. Cooking loss decreased with increasing chicken cantent in sausaga (P〈0.05). The addition of α-tocopherol to pork/chicken sausages delayed lipid and oxymyoglobin oxidation (P〈0.05) but did not influence pH value or cooking loss.
