    Notes: Various microbial inhibitor systems were studied for their effectiveness in a semgmoist dog food formulation. The effectiveness was measured as inhibition of the natural contaminants Aspergillus glaucus and Staphylococcus epidermidis and of an inoculated challenge organism, Aspergillus niger. The study was carried out at aw 0.85 and 0.88 and at pH 5.4 and 6.3 giving a total of 108 systems. It was found that very few compounds alone or in combination could prevent growth of all three organisms. The only FDA approved additive that was effective alone was propylene glycol.

    Notes: Seven methods of water activity (aw) measurement were tested in a collaborative study between three laboratories. These methods included the direct measurement of vapor pressure, an isopiestic technique and several electronic devices. Both saturated salt solutions and foods were measured. When compared to standards, the vapor pressure manometric (VPM) technique gave the best results. However, the absolute values of the standards are questionable. The results of the comparison of the values for foods showed a range of ##0.02 aW units. Thus, one can question the validity of literature values reported to three decimal places or the absolute values for limits on microbial growth. This research suggests that some standards must be set for all research groups and shows that overall, the VPM is probably the best and most accurate method

    Notes: An intermediate moisture food at water activity 0.85 was stored in air and an oxygen-free atmosphere at 25, 35 and 45°C. Various modes of deterioration were studied including rancidity, nonenzymatic browning, vitamin C loss, and organoleptic panel evaluation. It was found that all modes of deterioration deviated from an Arrhenius relationship of log (rate) vs °K−1 when higher temperature data were projected to lower temperature. These projections underestimate the true shelf life which is of benefit to the processor. This deviation may be due to mechanism changes, but most likely is a result of the heterogeneity of the system. The major mode of organoleptic deterioration was related to browning. Lysine and vitamin C losses were also very rapid. A special low oxygen scavenger web film increased shelf life significantly.

    Notes: The rate of loss of protein quality in enriched pasta was studied at constant temperature (30, 37 and 45°C) and under a continuous sine wave temperature fluctuation (25/45°C with a 24-hr period). Both loss of lysine by the fluoro-dinitro benzene (FDNB) method and a bioassay (Tetrahymena thermophila growth) for protein quality were employed. Significant loss of protein quality occurs in about 1 yr at temperatures above 30°C. The bioassay method showed that nutrient losses other than lysine could be occurring. Data from the constant temperature studies were used to predict the losses that occurred for the sine wave condition using the Hicks-Schwimmer model as modified with an Arrhenius approach. The prediction model gave about 15% error in comparison to actual losses. In addition, the rate of loss for the sine wave (25/45°C) was greater as predicted than the rate of loss at a constant mean temperature of 35°C.

    Notes: Comparison was made of the extent of browning during accelerated storage tests of glucose/aspartame and glucose/glycine model systems under steady state conditions of 70, 80, 90, and 100°C and an aw of 0.80. Browning of aspartame followed zero order kinetics with a time to 0.1 absorbance units at 420 nm of 11.40, 5.3, 2.15 and 1.0 hr for each respective temperature. The activation energy (EA) was 22.0 Kcal/mole for the glucose/aspartame system and 15.5 Kcal/mole for the glucose/glycine system. The temperature sensitivities (Q10) for the model systems were 2.4 and 1.9, respectively. The predicted shelf life to reach 0.1 absorbance units in an aqueous system at 45°C is 62 days compared to the actual value of 60 days.

    Notes: Comparison was made between the amount of browning and protein quality loss during storage of whey powder under steady state conditions (25, 35 and 45°C and aw's of 0.33, 0.44 and 0.65 at each temperature) and a fluctuating temperature condition of 25/45°C with alternating 5 day periods at each temperature. The results showed that the maximum rate of browning and loss of protein quality (e-DNP-lysine and RNV by Tetrahymena assay) occured at aw 0.44 rather than at a higher aw as is found for many dried foods. The Q10's for the reactions were about 5 and 3.7 respectively, for browning and protein quality loss. Of major importance was that storage losses at constant aw, but under the fluctuating temperature condition, were significantly greater than at the mean temperature of 35°C. Using steady state data from the 25, 35 and 45°C conditions, the prediction of browning and protein quality losses for the fluctuating condition compared favorably (+ 10%) to actual losses, based on the simple Arrhenius relationship which indicates that temperature history does not significantly change reaction mechanisms.

    Notes: The stability of thiamin and riboflavin in enriched pasta humidified to different water activities was measured at 25, 35, 45, and 55°C for periods of up to 1 yr. Riboflavin was shown to be extremely stable (dark reaction) whereas thiamin losses were significant. Thiamin loss increased with temperature (Q10 of 4.5) and water activity. Predictions of thiamin loss for a square wave temperature fluctuation using steady state data were compared to actual losses found in storage for pasta held at equal alternating times at 25/45 and 25/55°C. The Hicks-Schwimmer-Labuza model provided an adequate method for predicting both the amount of loss and the effective temperature from steady state data.

    Notes: Potato chips, popcorn, puffed corn curls, and saltines were equilibrated to various water activities (aw) over saturated salt solutions. Sensory panels determined the crispness and textural hedonic quality of the humidified products by the magnitude estimation technique coupled to a verbal concept scale. Critical water activities (ac), where the products became organoleptically unacceptable, generally fell in the 0.35–0.50 aw range. Instron analyses showed that the force-deformation curve changed distinctly near the ac for saltines and puffed corn curls, while the curve changed more gradually with increasing aw for popcorn. Potato chips did not produce a consistently shaped force-deformation curve. The cohesiveness value of popcorn was found to be a good indicator of its sensory crispness.
