    Description / Table of Contents: Résumé Parmi les composés dans les extraits demeurant après volatilisation des boissons alcooliques après vieillissement dans des futs en bois de chêne se trouve un groupe d'aldehydes aromatiques dont la vanilline, le syringaldehyde, le coniferylaldehyde et le sinapaldehyde sont les plus importants, la séparation et l'identification de ces dérivés de bois de chêne sont facilement effectuées par chromatographie sur papier ou en couche mince. L'avantage principal de la chromatographie en couche mince par rapport à la chromatographie sur papier est le temps beaucoup plus court nécessité pour le développement. De plus, les taches des aldehydes aromatiques dans la chromatographie en couche mince étaient plus compactes ce qui en facilitait la détermination semiquantitative par comparaison visuelle avec les taches de solutions étalons. La localisation et l'identification des taches étaient effectuées à la lumière ultra-violette et par aspersion avec des solutions acidifiées de 2,4-dinitrophenyl hydrazine (taches brunes à brun jaunâtres) ou par du phloroglucinol acidifié. (taches roses à pourpres). La concentration des aldehydes aromatiques trouvés dans les eaux de vie vieillies dans du chêne français (Limousin, Tronçais et Gascogne) et dans du chêne Américain ont été comparées. En Général, la syringaldehyde et la vanilline sont les plus abondants, le coniferylaldehyde est souvent aussi abondant, alors que le sinapaldehyde avait une concentration très faible, particulièrement dans les chênes français. Des chênes américains neuf donnaient des concentrations plus élevées d'aldehydes aromatiques que les chênes français correspondants, quoique ces derniers produisaient plus de couleur, le tanin, et d'extrait total. Le chêne flambé (utilisé pour le whisky „Bourbon” Americain) donnait une concentration quelque qeu accrue d'aldehydes que des futs d'un type identique mais non flambés. Une autre tache sur les chromatogrammes était non aldehydique mais fortement fluorescente à la lumière ultraviolette. Elle était importante dans le chêne Américain mais presque absente dans le chêne français, et est probablement de la scopolétine. Des résultats similaires ont été obtenus par l'extraction des copeaux de chêne avec des mélanges éthanol-eau et la récupération des extraits.
    Abstract: Zusammenfassung Unter den Verbindungen, die man in den Extrakten verflüchtigter alkoholischer Getränke nach Alterung in Eichenholzfässern vorfindet, ist eine Gruppe aromatischer Aldehyde, die im wesentlichen aus Vanillin, Syringaldehyd, Koniferylaldehyd und Sinapaldehyd besteht. Die Trennung und Identifizierung dieser Abkömmlinge aus dem Eichenholz ist mittels Papier- oder DC einfach zu erreichen. Der Vorteil der DC gegenüber der Papierchromatographie liegt in der Zeitersparnis für die Entwicklung. Außerdem sind die Flecken der aromatischen Aldehyde in der DC viel kompakter, was die semiquantitative Bestimmung durch Vergleich mit Flecken der Standard-Lösungen erleichtert. Die Lokalisation und Identifizierung der Flekken erfolgt unter UV Licht nach Besprühen mit ausgesäuertem 2,4 Dinitro-phenylhydrazin (braun bis braungelblicher Fleck) oder mit angesäuertem Phoroglucinol (Flecke rosa bis purpur). — Es wurden Vergleiche angestellt zwischen den Konzentrationen der aromatischen Aldehyde aus gealtertem Branntwein, einmal in Fässern aus französischem Eichenholz (Limousin, Tronçais, Gascogne), zum andern aus amerikanischem Eichenholz. Im allgemeinen sind Syringaldehyd und Vanillin am meisten vertreten, oft auch Koniferyaldehyd, wogegen Sinapaldehyd eine sehr schwache Konzentration, vor allem bei französischem Eichenholz aufweist. Neues amerikanisches Eichenholz zeigte höhere Konzentrationen an aromatischen Aldehyden als entsprechende französische Sorten, obwohl die letzteren mehr Färbung, mehr Tannin und mehr Gesamtextrakt liefern. Geflammte Eiche (benutzt für amerikanischen „Bourbon-Whisky”) ergibt eine etwas höhere Konzentration an Aldehyden. Ein anderer Fleck gehörte nicht zu den Aldehyden, war aber im UV-Licht stark fluoreszierend. In amerikanischem Eichenholz zeigte er sich reichlich, im französischen dagegen fast nicht. Wahrscheinlich handelt es sich um Scopoletin. Ähnliche Ergebnisse wurden durch Extraktionen aus Eichenholzspänen mittels Äthanol-Wasser-Gemischen und Wiedergewinnung der Holzextrakte erzielt.
    Notes: Summary Among the compounds found in the extract remaining after volatilization of alcoholic beverages after aging in casks of oak wood are a group of aromatic aldehydes of which vanillin, syringaldehyde, coniferylaldehyde and sinapaldehyde are the most important. The separation and identification of these derivatives of oak wood are readily effected with either paper or thin layer chromatography. The primary advantage of thin layer over paper chromatography is the much shorter time required for development. Also the spots for the aromatic aldehydes by thin layer were more compact which facilitated semi-quantitative determinations by visual comparisons with spots from standard solutions. Location and identification of spots were effected with ultraviolet light and by spraying with solutions of either acidified 2,4-dinitrophenylhydrazine (brown to brownish yellow spots) or acidified phloroglucinol (pink to purple spots). The concentrations of the aromatic aldehydes found in brandy aged in French oak (Limousin, Tronçais and Gascony) and in American oak were compared. In general syringaldehyde and vanillin are the most abundant, coniferyaldehyde is often equally abundant, while sinapaldehyde was very low especially in the French oaks. New American oak imparted higher levels of aromatic aldehydes than corresponding French oaks, although the latter produced more color, tannin and total extract. Charred oak (used for American bourbon whiskey) showed somewhat higher levels of aromatic aldehydes than comparable uncharred casks. Another spot on the chromatograms was nonaldehydic but strongly fluorescent under ultraviolet light. It was abundant in American oak, but nearly absent in French oaks, and presumably is scopoletin. Similar results were obtained by extracting oak chips with ethyl alcohol-water mixtures and recovering the wood extracts.
