Zusammenfassung
Als Bestandteil umfassender Untersuchungen über genetische und umweltbedingte Änderungen von Kornertrag, Proteinertrag und Proteinqualität unter kubanischen Klimabedingungen wurden Proteingehalt und -zusammensetzung der Körner von 6 verschiedenen Reissorten bzw. -linien sowie der Einfluß von Pflanzdichte und Stickstoffdüngung auf Proteinertrag, -zusammensetzung und-gehalt der Körner der Standardsorte IR-8 untersucht. Dazu wurdenKjeldahl verfahren (Rohproteinbestimmung),Lowrymethode (Proteingehalt der Fraktionen), fraktionierende Extraktion nach demOsborn-Schema in Gestalt der Methode nachSchwerdtfeger (Albumine, Globuline, Prolamine, Gluteline) und die automatische ionenaustauschchromatographische Methode der Aminosäureanalyse (basische Aminosäuren) benutzt. Zwischen den untersuchten Sorten ergaben sich signifikante Unterschiede im Rohprotein-, Globulin- und Prolamingehalt. Die Unterschiede zwischen den Proteinfraktionen waren bei den Prolaminen am ausgeprägtesten. Eine quantitative Glutelinextraktion war mit dem benutzten Serienverfahren nicht möglich. Es traten sortenabhängige Löslichkeitsunterschiede bei den Glutelinen auf, die eine Feststellung sortenbedingter Differenzen für diese Fraktion der Reserveproteine unmöglich machten.
Die Pflanzdichte übte keinen Einfluß auf den Proteingehalt der Körner der Sorte IR-8 aus. Mit zunehmender Pflanzdichte stieg jedoch der Kornertrag und damit in gleichem Maße der Proteinertrag bis zu einem optimalen Pflanzabstand von 8 bis 10 cm an, ohne daß sich die Proteinqualität verminderte. Zusätzliche Stickstoffdüngung ergab in Abhängigkeit von den Klimabedingungen während der Vegetationsperiode zwar keinen signifikanten Kornertragszuwachs, jedoch durch Erhöhung des Proteingehaltes im Korn einen zusätzlichen Anstieg im Proteinertrag. Dabei verminderte sich auf Grund der hohen absoluten Zunahme des Glutelinanteils bei relativ geringer absoluter Zunahme der Prolaminfraktion die Proteinqualität unerheblich.
Summary
Grain yield, protein yield and protein composition of 6 varieties of rice were estimated under climatic conditions of Cuba in 1971. Furthermore, the influence of population density and nitrogen fertilization on yield characteristics, protein content and composition of grains of the standard variety IR-8 were investigated as part of a more sophisticated experimental program with the aim of optimizing cultivation condition of rice in Cuba. The following methods were applied in the course of these investigations:Kjeldahl method (crude protein),Lowry method (protein content of different fractions),Schwerdtfeger modification of theOsborne scheme of grain protein fractionation (albumines, globulines, prolamines, glutelines), and automatic amino acid analysis (basic amino acids). Some of the varieties exhibited statistically significant differences with respect to the contents of crude protein, globulines, and prolamines. Differences between protein fractions were most prominent in the prolamin fraction. Glutelines could not be extracted quantitativety by the screening-methods applied. Differences with respect to the solubility of gluteline fractions were observed between different varieties of rice. Consequently, it was impossible to verify differences in glutelines quantitatively.
The population density did not influence the protein content in kernels of the variety IR-8, but grain yield increased with decreasing distances between rice plants. Therefore, protein yields were increasing by the same rate as grain yields, without any decrease of protein quality. Additional nitrogen fertilization did not significantly increase the grain yield under the climatic conditions ruling during the vegetation period of these experiments, but led to further increase of protein yield by causing higher protein contents of the grains. There was only little decrease in the lysin content of the protein. This can be explained on the basis of the large absolute increase in the gluteline fraction in comparison with the relatively small increase in prolamines.

В рамках обширной раб оты об изменениях уро жая зерна, а также количества и качества его белка п од влиянием генетиче ских и средовых факторов, в климатических усло виях о. Куба, исследова лись содержание и состав протеина зерн а шести сортов и линий риса. Кроме того изучалось влияние густоты посе ва и азотистых удобре ний на количество, состав и содержание протеина зерна стандартного с орта риса IR-8. В этих целях применялся метод Кье льдаля (определение с ырого протеина), метод Лаури (содержание про теина отдельных фрак ций), фракционирующая экстракция по особор новской схеме в виде м етода Швердтфегера (альбум ины, глобулины, проламины, глутелины) и автоматический мето д анализа аминокислот с примен ением ионообменной хроматографии (основ ные аминокислоты). Между а нализированными сор тами были найдены достоверные различия в содержани и сырого протеина, глобулина и проламин а. Различия между отдел ьными фракциями прот еина были наиболее четко выражены у проламино в. Количественная экс тракция глутелина при серийном анализе ока залась неприменимой. У глутелинов были обна ружены различия их раствори мости, зависящие от со рта; это обстоятельство исключило возможнос ть выявления сортовы х различий для этой фракции запасных белков. Густота посева не ока зывала влияния на сод ержание протеина зерен сорта IR-8. В загущенных п осевах наблюдолось, о днако, повышение урожая зерна; в той же мере пов ышался и урожай белка до оптимального рассто яния между растениями, в 8–10см, причем качество б елка не ухудшалось. Добавочное азотисто е удобрение хотя и не д авало достоверной прибавк и урожая зерна, но, благо даря повышению проце нта белка в зерне, наблюдалось и добавочное повышен ие урожая белка. При эт ом было замечно, правда незначительн ое, снижение качества протеина, обусловленное высок ой абсолютной прибавко й доли глутелина при относительно невысо кой абсолютной прибавке фракции проламина.
