Vitamin C and α- and β-Carotene Contents in Vegetables Consumed in Finland during 1988–1989 and 1992–1993

Abstract

Vitamin C and α- and β-carotene contents were determined in domestic and imported vegetables consumed in Finland during 1988–1989 and 1992–1993. Vitamin C contents in vegetables of domestic or imported origin varied considerably and seasonal variation was also high. Vitamin C contents were highest in yellow and red sweet peppers and cauliflower and lowest in lettuce. Contents of α- and β-carotene were highest in carrots and tomatoes.
