Summary Experiments were performed to investigate growth and alcohol production by yeast cells at high temperatures. Raising the temperature from 30.0°C to 39.0°C resulted in the desired effect: less growth and higher ethanol productivity.At temperatures above 39.6oC,however, cell death predominates.
