Abstract Native egg white inhibits trypsin and chymotrypsin of animal origin. The present studies demonstrate that egg white, either raw or spray-dried, is a relatively weak inhibitor of human trypsin but does inhibit human chymotrypsin. Egg white was also shown to significantly inhibit the in vitro digestion of casein by human pancreatic juice. These findings may be important in the nutrition of patients with impaired digestive functions.
