Zusammenfassung Bei der Behandlung von Mehlen mit Chlordioxid bilden sich bei der Reaktion mit Mehllipiden ausschließlich chlorierte oxidierte Fettsäuren wie Chlorhydroxyoctadecan- und Chlorhydroxyoctadecensäure, was für den Nachweis einer Bleichung mit Chlordioxid ausgenutzt werden kann. Zur Isolierung und Bestimmung dieser Fettsäuren dient das gleiche analytische Verfahren, das zum Nachweis der Behandlung von Mehlen mit Chlor entwickelt worden ist. Da zur Bleichung mit Chlordioxid anders als mit Chlor wesentlich niedrigere Dosen ausreichen, crhöht sich der Gesamtgehalt der Mehle an gebundenem Chlor nur geringfügig, so daß eine solche Behandlung allein aufgrund des Chlorgehaltes nicht mit Sicherheit erkannt werden kann.

Summary During the treatment of flours with chlorine dioxide, in the reaction of flour lipids, only chlorinated hydroxyfatty acids such as chlorohydroxy stearic acid and chlorohydroxy oleic acid are formed. This fact can be used for the detection as to whether the flour has been bleached with chlorine dioxide. For isolation and determination of these acids the same analytical procedure can be used as the one developed for the detection of the treatment of flour with chlorine. Because lower doses of chlorine dioxide than chlorine are sufficient for bleaching, the content of total bound chlorine in flour lipids is only slightly increased by this treatment. Hence, bleaching with chlorine dioxide may not be recognized with certainty solely from the determination of total bound chlorine in the flour lipids.
