    Notes: Determination of total extractable protein (TEP) in meat by accepted methods may yield erroneously high results due to turbidity in the extracts subjected to protein determination. A method is proposed involving the use of a microfilter which clarifies the extract and thereby circumvents the problem. The new method also takes advantage of the observations that extraction may be carried out at room temperature after simple grinding through a 3 mm hole plate.
