    Notes: The rate of loss of protein quality in enriched pasta was studied at constant temperature (30, 37 and 45°C) and under a continuous sine wave temperature fluctuation (25/45°C with a 24-hr period). Both loss of lysine by the fluoro-dinitro benzene (FDNB) method and a bioassay (Tetrahymena thermophila growth) for protein quality were employed. Significant loss of protein quality occurs in about 1 yr at temperatures above 30°C. The bioassay method showed that nutrient losses other than lysine could be occurring. Data from the constant temperature studies were used to predict the losses that occurred for the sine wave condition using the Hicks-Schwimmer model as modified with an Arrhenius approach. The prediction model gave about 15% error in comparison to actual losses. In addition, the rate of loss for the sine wave (25/45°C) was greater as predicted than the rate of loss at a constant mean temperature of 35°C.

    Notes: The Baumann capillary suction apparatus, the AACC standard centrifugation method, moisture sorption isotherm values and freezing point by cryoscopic osmometry were used to measure the water binding capacity (WBC) of several fiber sources. Although each method was able to distinguish between ingredients of different WBC's, the values obtained by the four methods were very different from each other. A significant correlation was only found between the Baumann data and the moisture sorption data for fruit, cereal and legume fibers, while no method correlated with the WBC as determined by the cryoscopic method. This suggests that the different methods evaluate different mechanisms of water binding and that one must carefully choose the proper method in predicting the water binding functionality of fibers in foods.

    Notes: Abstract The hydrolysis of sunflower oil using Candida cylindracea lipase in reversed micelles of AOT/isooctane was investigated. The inhibition caused by substrate and hydrolysis products has been found in the process of reaction. It was revealed that the extent of inhibition caused by oleic acid was higher than that caused by glycerol, and was much more serious in the case of the mixture of hydrolysis products. Moreover, with the initial addition of glycerol into the reaction mixture, the stability of lipase could be increased during the hydrolysis of sunflower oil in reversed micelles.

    Notes: Abstract  Vertical profiles of instantaneous cohesive suspension concentration, obtained from an acoustic suspended sediment monitor in the Changjiang Estuary, indicate that near-bed high-concentration suspensions consist of upper and lower high-concentration suspensions, separated by a natural breakpoint at ca. 2 g l-1. Acoustic images revealed near-bed high-frequency resuspension events of a few seconds, which contribute mainly to the formation of the lower near-bed high-concentration suspension. Upper and lower lutoclines are also indicative of re-entrainment of lower and upper high concentration suspension, respectively. Near-bed high-frequency resuspension is caused by turbulence, while re-entrainment is probably attributable to internal wave activity.

    Notes: Summary A new lignin isolation method has been developed. Wood and pulp were subjected to ball milling, swelled in an organic solvent, and then treated with a cellulase. The enzyme digestion time could be shortened to 1 day with this method. The lignin obtained has been named Swelled Enzyme Lignin (SEL). Swelling and enzyme digestion conditions and their effects on lignins were investigated. The SEL's from wood could be directly washed with water, while those from pulp had to be washed with aqueous acetic acid because they were water soluble. The purification of crude SEL's was accomplished by extracting them with dioxane-water, and then precipitating and washing with ethyl ether. Lignin yields were 24–67% based on the total amount of lignin present. The characteristics of the SEL's were further investigated by gel-permeation chromatography (GPC), infrared and 13C nuclear magnetic resonance (NMR) spectroscopy.

    Notes: Abstract Salmonella infection is an important problem in immunocompromised patients. The synovium is a particular metastatic focus ofSalmonella infection and can result in many disabilities of life. Systemic lupus erythematosus (SLE) patients were highly susceptible toSalmonella infection. In the past 6 years, 41 patients withSalmonella septic arthritis have been treated in our hospital. Eleven patients had an underlying systemic disease of SLE which presented with a distinctive clinical course. Alcoholic liver disease (six cases) was another common underlying systemic disease. The most frequent predisposing articular factor was avascular necrosis (16 cases). The hip joint was the most commonly involved site.Salmonella group B was the most common serotype (30/41). Seventy-three per cent (8/11) of the SLE group had involvement of two or more joints compared with only three out of 30 patients in the non-SLE group. The sex differentiation shows a predominance of young females (10/11) in the SLE group and middle-aged males in the non-SLE group. Moreover, in the SLE group, all 11 patients shared the risk of lupus nephritis and steroid use. Ten patients hadSalmonella group B bacteraemia and five had urinary tract infections simultaneously. In the non-SLE group, there were 10 patients with a history of steroid use, three with antecedent enteritis, 12 with bacteraemia, and three with necrotising fasciitis. Seven patients in each of the groups had a recurrent course. However, three patients in the non-SLE group had died during the episode of septic arthritis.

    Notes: Abstract The phase transition between unimer and micellar phases of poly(ethylene oxide)–poly(propylene oxide)–poly(ethylene oxide) (PEO–PPO–PEO) triblock copolymer Pluronic P105 in aqueous solution has been investigated as a function of temperature using Fourier transform infrared spectroscopy. The transition of 8 wt% Pluronic P105 in aqueous solution was found to occur at 25 °C. As temperature increases, PO blocks appear to be stretched conformers with strong interchain interaction, and the formation of a hydrophobic core in the micellar phase. The EO chains are found to change to a more disordered structure with low-chain packing density from the unimer phase to the micellar phase. Both the EO and PO blocks exhibit dehydration during the phase transition.
