Notes: Chitin (β (1°4)-N-acetyl-D-glucosamine) and chitosan (deacetylated chitin) are currently available in large quantities as waste products and by-products of the shellfish industry. Their potential as carriers for food additives was studied. Significant correlations were found between dye concentration ranging from 0.2–1.6 mg dye (FD&C Red No. 40) per g chitin or chitosan and dye-binding capacity of chitin or chitosan. Within a pH range of 2.0–7.0, dye-binding capacity of chitin was stable. Chitosan gelled below a pH of 5.5 and could not be evaluated but its dye-binding capacity was constant between pH 7.0 and 5.5. Above pH 7.0 dye-binding capacity decreased for chitin as well as for chitosan but between pH 2.0 and 6.0 no dye was released from dyed chitin containing 0.77 mg dye/g chitin.

Notes: Tomato seed protein concentrates (TSPC) were recovered from ground tomato seeds using alkaline extraction and three different protein coagulants (citric acid, citric acid/hydrochloric acid mixture or hydrochloric acid) at three coagulation temperatures (25°C 60°C or 95°C). The effect of this 3 × 3 protein recovery matrix on protein yield and composition of the freeze-dried TSPC was studied. No significant effect of protein coagulants on protein yield (TCA/heat coaguable protein) was found but it was significantly higher with samples coagulated at 25°C than when heat coagulation was applied. Coagulation procedures at room temperature resulted in lower moisture, crude fat and ash concentration than heat coagulated samples. Lowry protein content of TSPC was not significantly affected by recovery methods but crude protein content after coagulation with citric acid resulted in significantly higher values of the samples coagulated at 25°C than those at 95°C.

Notes: The effectiveness of chitin as coagulating aid, protein coagulants and coagulation temperatures in recovering tomato seed proteins, and their effect on composition and emulsion properties of tomato seed protein concentrates (TSPC) were investigated. Citric acid, hydrochloric acid, or a mixture of citric acid and hydrochloric acid were used and chitin addition ranged from 0 to 1.0% (protein basis). Coagulation temperatures employed were 25°C, 60°C or 95°C. Samples with no chitin added resulted in significantly (P 〈 0.05) lower protein yields than samples with chitin addition. Ash content of the TSPC was significantly (P 〈 0.05) affected by chitin addition and coagulation temperature. Lowest crude fat content was obtained with citric acid at 25°C. Lowry protein and total nitrogen was highest without chitin addition. Samples coagulated at 25°C showed highest emulsion ability and emulsion stability. The least stable emulsions were produced with hydrochloric acid. Chitin addition did not affect emulsion properties.

Notes: Abstract Seventeen families with one or two children suffering from congenital adrenal hyperplasia (CAH) were not only typed for their HLA-A,B, and D antigens but also tested biochemically forCAH heterozygosity after ACTH stimulation. The lod score analysis showed a close genetic linkage betweenCAH andHLA, indicating that theC-21-hydroxylase deficiency gene(s) causing CAH in the homozygous deficient state are-located in close proximity to theHLA complex on chromosome 6 with an estimated recombination fraction of 0 to 5%. HLA typing in 21 unrelated CAH patients revealed a statistically significant association to the HLA-B5 antigen with a relative risk value of 5.8. There was a significant correlation (P=0.0025) between theHLA segregation data and theCAH heterozygosity test results in relatives of CAH patients although a few ‘false negative’ results in theCAH heterozygosity test were observed. Thus, the combination of HLA typing and this biochemical test at present provides the most precise approach for detecting CAH carriers in families of CAH patients.

Description / Table of Contents: Summary The testosterone-excretion was determined in 24 children with congenital adrenal hyperplasia before and under treatment. In untreated patients testosteronexcretion is significantly higher than in normal patients. Under treatment normal testosterone-excretion can be obtained though after several weeks of treatment. Growthrate also decreases. In severe depression of growth under the treatment the dosage must be diminuished. As a result, better growth is obtained, but also a higher steroidexcretion. Growth and bone age must be carefully monitored during treatment.

Notes: Abstract Plasma levels of testosterone, estrone, and estradiol were measured in healthy males of all developmental stages and compared to the values of adolescents suffering from gynecomastia. There was no difference between normals and patients in their testosterone and estrogen levels, and no imbalance of the testosterone-estrogen ratio was observed in pubertal gynecomastia.

Notes: Summary Highly deacetylated chitosan was accumulated in the mycelia ofMucor rouxii orPhycomyces blakesleeanus. These cultures also effected the deacetylation of the chitin ofAspergillus niger mycelium into chitosan. After 96 hours of incubation with these cultures the degree of acetylation of commercial crab shell chitosan was reduced from 25.0% to values between 4.3 and 8.6%. The potential exists for the production of chitosans with tailored physico-chemical properties from “waste” chitin.

Notes: Abstract A cluster culture of Vanilla planifolia Andr. has been established from shoots. It has been maintained in the dark. Various light conditions had little effect on its growth. However, the light conditions did affect the production in both quantity and quality of compounds associated with the vanillin pathway, particularly the 4-hydroxy-3-methoxybenzyl alcohol.

Notes: Summary In an attempt to develop concurrent permeabilization/immobilization systems for the production of secondary plant metabolites, the effects of chitosan, alginate, carrageenan gel and carrageenan/chitosan copolymers as immobilizing agents and immobilization procedures on viability of culturedApium graveolens cells have been examined. Chitosan immobilization, ascorbic and succinic acid resulted in low viability of plant cells but use of carrageenan/chitosan copolymers enabled maintenance of viable cell lines providing the potential for concurrent immobilization/permeabilization of cells and elicitation of secondary metabolites by chitosan.
