    Notizen: Results obtained in the determination of sensory thresholds with three different simplified methods were compared. The methods were: a modification of the ascending method of limits (1), one based on the method of the constant stimuli (2), and one based on the use of scales (3). The study was carried out on two sensorially simple systems, sucrose and aspartame aqueous solutions. The thresholds values for sucrose obtained by method 1 (1.41 g/L) and by method 2 (1.60 g/L) were similar and within the range obtained by method 3 (0.6–1.6 g/L). For aspartame the values obtained with methods 1 and 2 were also similar (0.004 and 0.005 g/L, respectively), but they were below the minimum value of the corresponding range (0.008–0.016 g/L) calculated with method 3. These results suggest that the sensory methods provoked less variability in thresholds values than other noncontrolled factors. The limitations and advantages of each method are discussed considering: experimental work, precision of results and practical validity.

    Notizen: Texture of orange gels prepared with 15% fruit pulp, sucrose up to 55° Brix and five different gelling agents — kappa-carrageenan, kappa-carrageenan plus locust bean gum, alginate, gellan gum, and gellan, xanthan and locust bean gums — was studied by Free-Choice Profile (FCP) analysis. Maximum rupture force and deformation at rupture were also determined by uniaxial compression in an Instron texturometer. Generalized Procrustes Analysis applied to FCP data permitted differentiation between samples and informed on the textural attributes responsible for the observed differences. Sensory differences were in general in accordance with mechanical differences. However, carrageenan and gellan gum gels were differentiated with the sensory method applied but not with mechanical tests.

    Notizen: The texture of twelve samples of farmed gilthead sea bream (Sparus aurata) from experimental and commercial cultures, fresh and frozen, was determined by instrumental texture profile analysis (TPA) of whole raw fish and by sensory analysis of the corresponding cooked fish fillets. Average values of TPA hardness and chewiness were higher for fresh samples (78.0 N and 41.9 N, respectively) than for frozen and thawed samples (43.5 N and 21.5 N, respectively). The effect of freezing on springiness and cohesiveness values was different depending on the sample (a significant sample × freezing interaction). By sensory analysis, higher firmness, chewiness and fibrousness, and less juiciness were detected in frozen samples. Only one sample was perceived as less chewy, less fibrous and more juicy than the rest, and that corresponded to the smallest (less mature) fish. High percentages of the variability of sensory firmness (92%), chewiness (91%) or juiciness (85%) were explained by several of the TPA parameters measured on the raw whole fish using a fast nondestructive test.

    Notizen: Sixteen low-sugar peach nectar samples were prepared with 60% fruit, 0.082 to 0.922 g/L aspartame and 0 to 4.0 g/L guar gum, following a two-factor central composite rotatable design. The formulation containing 0.6 g/L aspartame and 0.6 g/L guar gum was selected by Response Surface Methodology. Chemical composition, calorie content, rheological behavior and acceptability of the selected sample, the control sample with added sucrose and of both low-calorie and regular commercial nectars were compared. Acceptability data were analyzed by ANOVA, signal to noise ratio and Internal Preference Mapping. Acceptability of the selected sample did not differ from that of the control sample nor from some commercial nectars.

    Notizen: Influence of fruit content, interaction with final soluble solids and added pectin on gel strength of strawberry and peach jams was studied. Composition ranged 25–55%, 60–70 °Brix, 0.3–0.7% added pectin in strawberry jams and 0.1–0.5% in peach jams. Gel strength was measured in a Stevens LFRA texture analyzer. Regression equations showed that in strawberry jams effect of fruit content was quadratic and interaction with soluble solids was weak and negative while in peach jams the same effect was linear and the interaction was strong and positive. No interaction of fruit content with added pectin was observed, showing those effects were independent and additive.

    Notizen: Abstract Eight samples of peach nectars were profiled by a trained panel and assessed for overall liking by a consumer panel. Internal preference mapping was used to derive a multidimensional space of samples based only on acceptance data. The first three preference dimensions showed significant fit for 91.2% of the consumer population. According to the position of these consumers on the maps, four subgroups could be formed. The first dimension was mainly related to sweetness and off-flavour. The second dimension was related to acidity and texture attributes (body, viscosity, sliminess, mouth-coating) and the third dimension was defined by flavour intensity, peach flavour, and artificial and cooked flavours. Based on these results, the preference criteria of each consumer subgroups were established.

    Notizen: Abstract Effects of reducing the sucrose content (from 55 to 30 °Brix in the final product) and of the use of gellan gum or a mixture of gellan, xanthan and locust bean gums (3:1:1) on the mechanical characteristics (maximum rupture force and deformation at rupture) of orange gels prepared with 15% w/w fruit pulp, sucrose and different amounts of hydrocolloids (0.25, 0.4, 0.55 and 0.7% w/w) were studied by uniaxial compression. The concentration of aspartame needed to compensate for sweetness loss was determined by a paired-comparison constant-stimulus method. Sensory characteristics (texture, appearance and flavour) of low-sugar orange gels (30 °Brix) with 0.5% w/w aspartame and different amounts (0.55 and 0.7% w/w) of gellan or the mixture of gums were analysed by the free choice profile method in comparison with the high-sucrose reference material (55 °Brix and 0.4% w/w gellan). Use of the mixture of gums permitted the obtention of low-sugar orange gels showing mechanical characteristics similar to those of the reference gel, though some differences in texture were perceived. The low-sugar gels were slightly lighter in colour and slightly more bitter and refreshing than the reference sample.

    Notizen: Abstract   The Repertory Grid method was used to aid consumers in developing a vocabulary to describe the sensory characteristics perceived from samples of three varieties of apples (Cox, Jonagold and Boskoop) from three different harvest dates each (early, middle, and late harvest). The aims of this work were to study whether consumers perceived different degrees of mealiness and to compare the perceptual spaces of samples obtained from consumer data and from conventional profiling with a trained panel, using Generalized Procrustes analysis. The relative positions of samples were similar for the consumers and the trained assessors' consensus spaces but the latter resulted in a better separation of samples. Boskoop samples were perceived as more acid, astringent, crispy and hard while the Cox variety was described as sweeter and more floury. Jonagold samples were perceived as juicier and occupied an intermediate position, with the mealy Jonagold sample closer to the Cox samples. The agreement between sample spaces showed that both panels perceived the major differences between samples in a similar way but the trained panel was able to differentiate further, mainly between the texture characteristics.
