    Notes: Changes in trimethylamine (TMA), total volatile bases (TVB), hypoxanthine and pH, and in cooked odour, flavour and texture have been followed during the iced storage of Nephrops norvegicus at approximately monthly intervals in order that seasonal variations could be investigated. None of the chemical methods investigated could give a prediction of age-in-ice to a standard error of less than 2 days. Initial TMA and TVB figures were significantly higher than other published figures.

    Notes: The triangular test, commonly used in sensory tests of food quality, is generally interpreted on the assumption that the probability of a correct selection is the same for all assessors, and independent for separate trials leading to the use of the binomial distribution in setting up tests of significance. Only when there is no real discrimination is it true that using one taster n times is the same as using n tasters once, the basis for the column heading ‘number of tasters or tastings’ in published tables of significance. This paper attempts to remove this assumption by the use of the beta-binomial distribution, and suggests an interpretation in which the chance of success is different between and within assessors so that a two-factor analysis becomes possible. A set of data relating to the flavour of fish has been reinterpreted in these terms.

    Notes: Standard acceptance sampling schemes can be modified for use in grading, where grades are defined by one or two boundaries and a percentage permitted to fall below the lower boundary. Schemes are constructed to grade fish by freshness, using sampling by attributes or by variables, where the method of assessment is Raw Odour. When another method of testing, such as the Torry Fish Freshness Meter, is used, it is not sufficient in the attributes scheme to convert to new grade boundaries; the corresponding percentages falling below the grade boundaries for the new test must be determined. The procedures for deriving a scheme are not restricted to grading offish, but may be applied to any similar quality control situation.

    Notes: Five levels (0, 5, 10, 15, 20%) of partially defatted chopped beef (PDCB) were substituted for lean in fermented beef stick sausage to evaluate changes over a 90 day period (24°C). Replacement of 0, 5, 10, 15, and 20% of the lean with PDCB did not affect percentage of fat, moisture, protein, moisture:protein ratio, or aw of the final product. TBA values were different (P〈0.05) between storage periods, but were all lower than those associated with oxidative rancidity. Warner-Bratzler shear values increased incrementally with increasing PDCB but were still within acceptable limits. Sensory profiles indicated that concentration of PDCB in the formulation had no effect on aroma, mouthfeel, taste, or texture of the product over storage time.

    Notes: Abstract The present paper outlines some of the difficulties encountered in the search for the etiologic agents of destructive periodontal diseases. These include technical problems such as acquiring an appropriate microbial sample, as well as difficulties in the dispersion, cultivation and identification of isolates in that sample. Many of these difficulties are currently being successfully addressed. A second set of problems is more conceptual in nature. These include difficulties in distinguishing between periodontal diseases and determining the state of activity of periodontal lesions. In addition, complexes of organisms and/or sequences of species may be involved in the progress of lesions. A further problem is encountered in attempting to distinguish overgrowths of opportunistic species from increases in proportions of true pathogens. Finally, it appears likely that different infections occur at the same time in a single oral cavity. The technical and conceptual difficulties eventually filter down to the data analytical step and present numerous problems to the analyst. With all of these difficulties in mind it is not surprising that the etiologic agents of destructive periodontal diseases are not clearly defined. However, improvement in technological assessments of the microbiota and clinical evaluation of the disease should permit reasoned approaches to be taken. The delineation of the etiologic agents of destructive periodontal diseases will be, of necessity, a multistage iterative process. Etiologic agents will be suggested by predominant cultivable studies and hypotheses concerning subsets of these agents tested using more specific procedures such as selective media, immunofluorescent techniques or DNA probes. Etiologic agents will be verified or discarded by such procedures. When new lesions are found without recognized pathogens, the process will iterate back to the predominant cultivable methodology again.

    Notes: Abstract. This paper reviews the development of various rapid microbial identification techniques and their potential role in the diagnosis of active periodontal tissue destruction. It also explores the concerns expressed by some, that although these techniques offer enormous promise as research tools, validation and translation of test results to clinical diagnosis, prognosis and treatment planning are still problematic. It may be premature to recommend these tests to clinicians in practice. Further longitudinal studies are required to establish the best use of these techniques in a clinical setting.
