    Notes: Abstract According to the measurement of the pigment production and some material balance treatments, the monosodium glutamate (MSG), which represents a main substrate involved in the production of red pigment by Monascus ruber, is recovered on-line. Fedbatch operation then represents an alternative for increasing the production of pigment. A nonlinear quotient control scheme is expressed to regulate the monosodium glutamate substrate at an optimal value determined from batch studies.

    Notes: Abstract The biomass of Cryptococcus curvatus, an oleaginous yeast, reached 11 g/l and accumulated 46% (w/w) lipid when grown for 35 h in batch culture on diluted (25%) prickly-pear juice. The C:N ratio of the juice was about 50 g/g. The efficiency of substrate conversion was 0.48 g/g for biomass and 0.22 g/g for lipids. The extracted lipids were mainly oleic (18:1) and palmitic (16:0) acids and the quality of pipid approached that of palm oil.

    Notes: Summary The production of citrinin by variousMonascus species was determinated using various culture mediums and conditions. The maximal production was obtained in fermentor usingM. ruber with concentrations of 380 mg/l. Since citrinin is a toxic product, it is essential that the production of red pigments as food additives fromMonascus sp. avoid the occurrence of citrinin; so, we argue that some nitrogen sources are unfavorable to the production of citrinin.

    Notes: Summary A novel method for evaluating pigment production during fermentation ofMonascus ruber has been developed and consists of reflectance measurement with a 10° observer under an artificial illuminant. A spectrophotometer was adapted to measure pigmentation during culture in a bioreactor. The lightness parameter L was the most useful information delivered by this sensor. An absorbency over 30 units at 480nm on batch cultures was estimated on-line without dilution.

    Notes: Abstract Formation of red pigment by Monascus purpureus via diauxic growth on glucose and ethanol in submerged culture was optimized based on inoculum preparation and culture medium. A vegetative inoculum was prepared from spores grown on ethanol. The optimized culture medium was low in phosphates, and had an initial pH of 5.5. The characteristics of Monascus purpureus grown on glucose and on ethanol were compared: the specific consumption rate of glucose (qG) was higher than the specific consumption rate of ethanol (qE), whereas the specific growth rate was greatest with ethanol. The specific production rate of red pigment (pOD) and pigment yield (YOD/s) with glucose was twice that with ethanol. A novel fermentation process was developed with M. purpureus initially grown with controlled ethanol formation, and consumption of the latter during pigment formation.

    Notes: Abstract When Kluyveromyces marxianus was cultivated on a defined medium, flavour volatile compounds accumulated in the broth. Besides superior alcohols and aldehydes, acids and fruit esters could be analyzed by gas chromatography and coupled gas chromatography-mass spectrometry. The predominant components are isoamyl alcohol, 2-phenylethyl alcohol and isobutyric acid with 180 mg/L, 400 mg/L and 290 mg/L broth, respectively.

    Notes: Following our investigations on citrinin production by Monascus ruber in a chemically defined medium, the kinetic behaviour of this toxin in the fermenter was studied with relation to production of pigments, biomass and nutrient consumption. Showing a secondary metabolite pattern, citrinin was produced when dμ/dt and dQs/dt were ≤ 0, while a high specific production rate of pigments occurred when dμ/dt and dQs/dt were 〉 0. No trophophase-idiophase transition was detected during the cuitivation, and the behaviour of pigment production was similar to that of a primary metabolite.
