Chemical Constituents of Black PepperThree new minor alkaloids were isolated from Piper nigrum. „Chavicin“ so far believed to cause the particular taste of pepper, is not cis,cis-piperine, but a mixture of piperine and several minor alkaloids. cis,cis-Piperine could not be detected in black pepper. All cis-trans isomeric acids and their piperidides were synthesized. Their properties likewise show clearly that the „chavicin“ of the older literature can not have been an isomer of piperine. The hot taste of pepper is due to piperine.

Aus Piper nigrum werden drei neue Nebenalkaloide isoliert. Das „Chavicin“, das bisher als Geschmacksträger des Pfeffers angegeben wurde, ist kein cis.cis-Piperin, sondern ein Gemisch aus Piperin und verschiedenen Nebenalkaloiden; cis.cis-Piperin kann im Pfeffer nicht nachgewiesen werden. Sämtliche cis-trans-isomeren Piperinsäuren und ihre Piperidide werden synthetisiert. Ihre Eigenschaften beweisen ebenfalls, daß das „Chavicin“ der älteren Literatur kein Isomeres des Piperins gewesen sein kann. Der scharfe Geschmack des Pfeffers wird durch Piperin verursacht.
