    Notizen: Substitution of a portion of the sodium chloride by potassium chloride in frankfurter formulations in order to decrease dietary sodium intake had little effect on the physical characteristics of the frankfurter or its sensory evaluation. Replacements of up to 50% of added sodium chloride with potassium chloride provided an acceptable flavor without excessive bitterness, and reduced total sodium content by 37%. The commercial spice mixture contributed substantially to the sodium levels in the frankfurters.

    Notizen: The addition of the anionic gums, xanthan and carrageenan, stabilized the texture of frankfurter emulsions against acid deterioration at 37°C in vinegar pickle. The proteins collagen, casein, and gluten, and the gums guar, arabic, and locust bean had no effect. The cationic gum, chitosan, formed an acid-stable gel but the gel would not hold the emulsion. The process of acid deterioration had an initial period of firming of the gel texture. Shear (rupture) and elasticity did not show a corresponding initial increase. Subsequent deteriorative changes were less in the emulsions with xanthan gum than in any of the other emulsions. The gum gel is formed at the expense of the protein-fat structure, probably through a gum-protein interaction.

Samolcs were analyzed after 1, 7, 14, 21, 28,‘or 35 days itorage at 2°C’for presence and number of aerobic and anaerobic mesophiles and endospore formers, and aerobic psychrotrophs. Conventional plate counts did not detect surviving microflora in any sample that received an absorbed dose of 1.91 kGy or higher, even after refrigerated storage for up to 35 days. The microflora in the control were predominantly Gram-positive for the first 21 days; however, Serratia predominated at 28 and 35 days. Staphylococcus, Micrococcus, and yeast species predominated in samples that received 0.57 kGy.

    Notizen: The dynamic moduli, E′ dyn, and loss tangents, tan δ, of polydimethylsiloxane and polydimethyldiphenylsiloxane polymers have been investigated by an in situ technique during γ-irradiation. These viscoelastic properties were calculated and plotted as a function of irradiation exposure time by measuring the free end displacements and resonance frequencies of polymeric cantilever reeds. The reeds were swept through a small frequency range from about 20 to 100 cycles/sec. The moles of effectively elastic chains per unit volume (v) of the two unfilled polysiloxahes were calculated from in situ modulus data and compared to values obtained utilizing the swelling technique. The approximate molecular weights between entanglements, Me, of these unfilled polymers were determined by extrapolation of moduli data to zero radiation exposure. The addition of a large silica filler, SiO2, into the polymers did not alter the crosslinking rates, and the filler did not enter into polymer - filler bonding.
