    Notizen: The changes which take place in meats during refrigerated storage may be caused by external bacterial sources as well as by naturally occurring enzymatic and chemical reactions. To obtain an understanding of these changes and of their relative importance in meat spoilage, it is necessary to differentiate between the bacterial-induced changes and those due to muscle autolysis. The success of such a study depends upon the method used for obtaining sterile tissue. The size of the animal from which the muscle tissue is to be taken determines to a great extent the procedure and precautions to be used. The larger the animal the more difficult it is to obtain sterile tissue and the more expensive the study becomes.

    Notizen: Colour stability (Hunter ‘a’ values) and lipid oxidation (TBARS (thiobarbituric acid reactive substances) values) of overwrapped cooked ham slices and cooked ham patties were measured at 2-day intervals for 10 days. Ham products were manufactured from α-tocopheryl acetate supplemented and control M. gluteobiceps which were halved and cured with either 25 or 100 mg nitrite (kg meat)–1. Vitamin E supplementation had a beneficial effect on reduced nitrite hams in terms of colour and oxidative stability.

    Notizen: Abstract Chromosomal DNA from Streptococcus mutans strain Ingbritt (serotype c) was cloned into the bacteriophage λ replacement vector L47.1. The bank of recombinant phage was screened for the presence of plaques in which sucrose-hydrolysing (sucrase) activity was expressed. Two distinct sucrase-expressing recombinants were identified. In one type, designated scr, the product is an invertase-like enzyme. This enzyme was purified from lysates of recombinants and shown to have an apparent Mr of 59000. The second class of recombinants was found to express a glucosyltransferase, identical in size, as well as in enzymatic and antigenic properties, to the previously described product of gtfA.
