Zusammenfassung Säurekatalysierte (pH 1) und enzymatische Hydrolysen (Emulsin) der Verbindungen, die durch Ethylacetat-Elution eines an Amberlite XAD-2 gebundenen Sauerkirschenextraktes (Prunus cerasus L., cv. Schattenmorelle) isoliert wurden, führten zur Bildung insbesondere aromatischer Aromastoffe, wie Benzalde hyd, Benzylalkohol, Benzoesäure und Eugenol, sowie von Monoterpenen, wie (2E)-2,6-Dimethyl-octa-2,7-dien-1,6-diol. Während mit diesem Monoterpendiol die Vorstufe der durch Säurekatalyse entstandenen Terpene der Dehydrolinalool-Oxidationsstufe ermittelt wurde, gelang der Nachweis des Vorläufers von Monoterpenen der Linalool-Oxidationsstufe, die ebenfalls bei der sauren Hydrolyse des Sauerkirschenextraktes entstanden waren, nicht. Die Identifizierung der gebildeten Aromastoffe erfolgte mittels Capillargaschromatographie (HRGC) und Capillargaschromatographie-Massenspektrometrie (HRGC-MS).

Summary Acid-catalyzed (pH 1) and enzymic (emulsin) hydrolyses of compounds isolated by ethyl acetate elution of a sour cherry fruit (Prunus cerasus, L. cv. Schattenmorelle) extract, obtained by Amberlite XAD-2 adsorption, indicated the presence of, among others, aromatic aroma compounds such as benzaldehyde, benzyl alcohol, benzoic acid and eugenol, as well as monoterpenes such as 2,6-dimethyl-octa-2(E),7-diene-1,6-diol. This monoterpene diol was identified as the precursor of terpenes of the dehydrolinalool oxidation state formed by acid treatment. However, we were unable to identify the precursor of monoterpenes of the linalool oxidation state, also liberated during acid hydrolysis of sour cherry fruit extract. Identifications of volatile compounds formed were performed by capillary gas chromatography and combined capillary gas chromatography mass spectrometry.
