Zusammenfassung Die geschmacksverstärkende Wirkung von 4 5′-Ribonucleotiden und von 16 Aminosäuren wurde sensorisch geprüft. Ausgewählte Systeme wurden unter Anwendung von paarweisen Unterschiedsprüfungen mit statistischer Auswertung untersucht. Dazu wurden einer seits die Geschmacksschwellenkonzentrationen der Nucleotide in Wasser (a), andererseits die Konzentrationen der Nucleotide ermittelt, die in einer wäßrigen 0,1%igen Aminosäurelösung gerade noch eine Verstärkung im Geschmack bewirkten (b). Der Quotient a/b wurde als Verstärkungsfaktor V bezeichnet. Drei 5′-Nucleotide und 5 Aminosäuren zeigten synergistische Effekte in den folgenden Systemen:l-Glu-5′-GMP (V = 50),l-Glu-5′-IMP (V = 50),l-GIu-5′-AMP (V = 25);l-Asp-5′-GMP (V = 20); PCA-5′GMP (V = 50);l-Met-5′-GMP (V =,5); Aminophosphonobuttersäure-5'-GMP (V = 5).

Summary The flavor potentiating effects of four 5'-ribonucleotides and of sixteen amino acids were investigated with paired comparison tests and statistical evaluation of the results. In these tests the taste thresholds of the nucleotides were determined (a) in pure water, and (b) in 0.1% solutions of different single amino acids. A potentiating factor V, the quotient a/b, then has been calculated. Three 5′-nucleotides and five amino acids showed potentiating effects in the following systems:l-Glu-5′-GMP (V = 50),l-Glu-5′-IMP (V = 50),l-Glu-5′-AMP (V = 25);l-Asp-5′-GMP (V = 20); PCA-5′-GMP (V = 50);l-Met-5′GMP (V = 5); Aminophosphorobutyric acid-5′-GMP (V = 5).
