Die Umsetzung von D-Fructose mit l-Lysin liefert α·∊-Di-D-Glucose-L-Lysin, ∊-D-Glucose-L-Lysin und ∊-D-Fructose-L-Lysin. Aus Fructose und L-Arginin werden α-D-Glucose-L-Arginin und α-D-Fructose-L-Arginin erhalten. Die Umsetzung von D-Glucose mit L-Lysin ergibt α·∊-Di-D-Fructose-L-Lysin und ∊-E-Fructose-L-Lysin. - α-D-Fructose-L-Lysin ist durch Umsetzung von ∊-Carbobenzoxy-L-Lysin mit D-Glucose und anschließende Abspaltung des Restes erhältlich. Bei Proteinen reagiert die ∊-Aminogruppe des L-Lysins in gleicher Weise zu Hexose-Aminosäure. Die Guanidinogruppe des Arginins reagiert nicht.
