The effect of NaCl on the water vapor sorption of casein was investigated. Up to about 110 moles NaCl per 105 g. casein the water sorption of the protein increases with increasing salt content. Adding more salt beyond this ratio has no further influence. If the water sorption of the protein is plotted against the salt content of the system, a curve with a break results. The salt content at this break point corresponds to the maximum binding capacity of the protein for this particular salt.

Es wurde der Einfluß von gebundenem Natriumchlorid auf die Wasserdampfsorption des Caseins untersucht. Bis zur Bindung von etwa 110 Molen Salz auf 105 g Protein nimmt der Gleichgewichtswassergehalt mit der Wasseraktivität nahezu linear zu, darüber hinaus ist der Zusatz weiterer Salzmengen ohne Einfluß auf die Wasserbindung. Die bestimmte Molzahl Salz, bei welcher der Knickpunkt in der Sorptionsfähigkeitskurve auftritt, stellt die maximale Bindungsfähigkeit des Caseins gegenüber Natriumchlorid dar.
