    Effect of Welsh Onion (Allium fistulosum L.) on Breadmaking Properties (2003)

    Notes: Breadmaking properties, such as bread height and specific volume, were improved in bread, made with wheat flour blended with Welsh onion (Allium fistulosum L.) powder, which is high in di-n-propyl disulfide (Pro2S2). Breadmaking properties also were improved in bread prepared from wheat flour blended with Pro2S2 alone. Brabender farinographs of Welsh onion powder/wheat flour and Pro2S2/wheat flour showed interesting properties in modifying the width of the tail. Size-exclusion high performance liquid chromatography of the wheat proteins in the control and blended flours showed a profile of low, medium, and high molecular weight peaks. The area of the high molecular weight peak was larger in the 2 blended flours than in control, indicating this protein was important for the improvement.

    Notes: : Maitake mushroom powder drastically decreased dough strength in Brabender farinography and was also effective in deteriorating bread-making properties (bread height and specific volume). These effects of maitake on farinograph values and bread-making properties were lost by boiling maitake/water suspensions or by adding EDTA, suggesting that the deteriorative effects by maitake may be caused by a metal protease. Flour dough that contained maitake was treated with 1% sodium dodecyl sulfate (SDS), and extracted proteins were subjected to SE-HPLC and SDS-PAGE. The range of high-molecular-weight (HMW) protein in those profiles gradually decreased with an increase of maitake, and HMW protein/total protein correlated well with bread height but did not have a clear effect on specific volume.

    Notes: Wheat flour was blended with triticale flour and baking tests were performed. When 18.3% of triticale flour was blended with wheat flour, the greatest bread height (mm) and specific volume (cm3/g) were obtained. Triticale flour was fractionated into water solubles, gluten, prime starch, and tailings by acetic acid (pH 3.5) fractionation. Baking results indicated that only the water solubles fraction produced the same baking performance as the original triticale flour. Several types of triticale flour were blended with wheat flours, and the breadmaking tests and measurement of amylase activities were compared. Baking results appeared to be related to a-amylase activity of triticale flour.

    Notes: Summary Recent studies regarding developmental changes in the myocardial contractile system from fetal, newborn, and adult animals are reviewed. From the data obtained so far, we conclude that in the early fetus myocardial contraction is mainly dependent on Ca which enters via the sarcolemma. Ca release from the sarcoplasmic reticulum is minimal. The role of the sarcoplasmic reticulum as a source of contractile Ca increases and the role of Ca influx across the sarcolemma in contractile system decreases with development.

Postoperative results of surgical repair of complete transposition of the great arteries (TGA) with pulmonary hypertension (PH) in 19 patients in whom mean pulmonary arterial pressure was 〉50 mmHg or the pulmonary/systemic arterial pressure ratio was 〉0.8 were examined. TGA with intact ventricular septum was diagnosed in 10 patients and TGA with ventricular septal defect in 9. At the time of corrective surgery (arterial switch 10, atrial switch 9), patients ranged in age from 7 months to 14 years (mean 2.4 years). Seventeen patients (89%) survived with New York Heart Association functional class I. Seven patients in whom calculated pulmonary vascular resistance was 10–20 U · m2 after surgery survived with subsequent regression of PH. Residual PH was diagnosed in 36% of survivors. Two patients in whom pulmonary vascular resistance was 26 and 36 U · m2, respectively, died after surgery. In patients with TGA, severe PH was not necessarily fatal and was potentially reversible after successful surgery.
