    Notes: The nutrient composition of fresh pork was studied in samples from 71 carcasses. On separable lean, nutrient composition was determined for 7 raw retail cuts from one side of each of 11 carcasses, and nutrient retention was determined on the 7 matching cuts from the other side that had been cooked by common household methods. Loins from 60 additional carcasses were analyzed to determine whether USDA grades 1, 2, and 3 and region of production affected nutrient composition. The data indicated that variation in nutrient composition of pork is more dependent on the retail cut within the carcass than either the grade or the region of production of the carcass. Cooking method significantly affected retention of most of the nutrients analyzed.

    Notes: Near infrared spectroscopy, operated in the transmission mode, was used to predict the total sugar content of a variety of fruit juices. Attempts were made to determine individual sugars in some of the juices. The best results were obtained for total sugar determination when separate calibrations were used for each type of juice. For orange juice, when n=35, r=0.87, the standard error of calibration = 0.22, and the bias and standard error of prediction = 0.04 and 0.25 respectively. Minimal amount of sample preparation was required for the rapid and nondestructive analysis of the total sugar content of juices. The potential application and limitations of the method are discussed.

    Notes: The lipid composition of food items from three hamburger-type fast food chains has been determined. Samples obtained over-the-counter were extracted with chloroform/methanol and analyzed for total fat, fatty acids, cholesterol, plant sterols, and tocopherols. Fatty acids were determined by an internally standardized gas chromatographic procedure on glass capillary columns coated with SP2340. Cholesterol, tocopherols and plant sterols were also determined by gas chromatography as trimethylsilyl ether derivatives. Condiments were analyzed separately. Limited data on the variability of French fries and plain hamburgers is also given.

    Notes: We discuss the relevance of chaotic scattering in heavy-ion reactions at energies around the Coulomb barrier. A model in two and three dimensions which takes into account rotational degrees of freedom is discussed both classically and quantum mechanically. The typical chaotic features found in this description of heavy-ion collisions are connected with the anomalous behavior of several experimental data.

    Notes: Paired loins from 18 barrow and gilt carcasses were randomly selected to evaluate the effect of marketing on the nutrient composition of fresh pork loins. The paired loin from one side was shipped through a predetermined marketing system, while the control loin was transported immediately back to Beltsville, MD. Rib chops from each loin were analyzed for key nutrients. The overall results from this study indicate that pork loins subjected to extreme marketing conditions have weights, appearance and quality traits and nutritional composition similar to loins shipped from a slaughter plant directly to the research facility. Thus, pork samples handled by a controlled research technique and sampled at the point of slaughter are basically equivalent to what the consumer purchases at the retail level.

    Notes: Summary The aim of the present investigation was to evaluate the potential cardioprotective effect of reduced glutathione (GSH) against the delayed cardiomyopathy induced by doxorubicin (DXR) in a well-documented rat model. DXR was administered i.v. at a weekly dose of 3 mg/kg for a total of 4 doses; 250 or 500 mg/kg of GSH was given i.v. 10 min before and 2 h after each DXR injection, resulting in a total weekly dose of 500 or 1000 mg/kg, respectively. The development of cardiotoxicity was monitored in vivo by means of electrocardiography (QaT duration), and was evaluated by measuring the contractile performance of isolated atria and by light and electron microscopy of left ventricular samples excised 5 weeks after the last DXR administration. DXR was found to impair body weight gain and to produce an irreversible and time-dependent prolongation of QaT, a decrease in myocardial contractility of isolated atria and typical morphologic alterations, including myocyte vacuolization and myofibrillar loss. Pretreatment with GSH at a dose of 500 mg/kg×2, but not at 250 mg/kg×2, partially prevented the impairment of body weight gain, QaT prolongation in ECG and the decrease in myocardial contractility of isolated atria induced by DXR. Alterations of the morphologic pattern were also significantly reduced in animals receiving the higher dose of GSH. Determinations of the cardiac non-protein sulfhydryl group content showed that GSH, at doses higher than or equal to 500 mg/kg, significantly increased this parameter, irrespective of the presence of DXR. In conclusion, the present data indirectly support the hypothesis that oxidative damage is involved in DXR cardiotoxicity and indicate that maintenance of the reduced thiol pool could be an important issue in myocardial protection.
