    Notes: : The aim of the present study was to clarify by means of sensory tests whether taste, aroma, or texture is the dominant contributor to people's ability to identify the animal species of meat. The meat samples used were loins of beef, pork, and lamb; chicken thigh; and aigamo (crossbreed of domestic duck and wild duck) breast. Panelists (32 to 35 persons) wearing eye masks ate cooked pieces, patties, and heated soups prepared from the meats of these 5 species with and without pinching their noses to regulate the aroma sensation, attempted to identify the species, and gave reasons for their identifications. In the test involving meat pieces and pinched noses, the percentage of panelists identifying chicken correctly was the highest, at 72%, whereas the percentages of correct identification for all other animal species were less than 50%; however, values were higher for each species in tests without nose pinching. In the tests of meat patties involving pinched noses, the percentage of correct identification for each animal species was slightly lower in comparison with the tests of meat pieces; however, the values were higher in tests without pinched noses. In the tests of soups using pinched noses, the percentage of correct identification for each animal species was lower than 30%; however, the values were higher in tests without pinched noses. These results led us to the conclusion that aroma is the most important contributor to the identification of the animal species of meat, and texture is the 2nd most important contributor. The contribution of taste appears much smaller than that of aroma and texture.

    Notes: Abstract Antineutrophil cytoplasmic antibodies (ANCA) have been reported to be associated with systemic vasculitis. However, the roles of ANCA subtypes in patients with IgA nephropathy remain to be fully investigated. We describe three Japanese patients with IgA nephropathy complicated by ANCA-associated vasculitis. Two patients with IgG class ANCA developed rapidly progressive renal failure and demonstrated mesangial proliferation with extensive extracapillary proliferation and segmental glomerular necrosis. One patient with IgM class ANCA showed severe extrarenal symptoms, such as lung fibrosis and neuritis, in addition to glomerular crescent formation. All three patients received immunosuppressive therapies, including corticosteroids and cyclophosphamide. The two patients who received these treatments early showed improvement in urinary protein excretion and renal function, in accordance with a decrease in the serum titer of ANCA. However, one patient in whom serum creatinine was already elevated showed a poor response to the treatment. These results suggest that ANCA subtypes may participate in the pathogenesis of crescent formation in patients with IgA nephropathy, and that early treatment with a combination of methylprednisolone pulse therapy, oral prednisolone, and cyclophosphamide pulse therapy may be beneficial in these patients.

    Notes: Abstract  Laboratory culture experiments were performed to study the changes in size-fractionated Fe concentrations during the growth of the oceanic diatom Chaetoceros sp. Fe concentration was estimated for three size fractions: large labile particles (〉0.2 μm), small colloidal particles (0.2 μm to 200 kDa) and soluble species (〈200 kDa). The size-fractionated Fe concentration in the nutrient-enriched filtered seawater medium without diatom cells became stable within 4 d after the spike of FeCl3 solution. Light irradiation by white fluorescent tubes with a 14 h light:10 h dark cycle did not significantly alter concentrations of the size-fractionated Fe. For the phytoplankton culture experiment, Fe-starved diatom cells were inoculated into the nutrient-enriched media aged for 19 d after the addition of FeCl3. With the growth of diatom cells, total acid-labile Fe concentrations decreased from 0.60 to 0.46 nM during 7 d of incubation. However, only the concentration of the small colloidal particles showed a significant decrease; the concentration of the other size fractions remained relatively constant. Although the media still contained sufficient amounts Fe as large labile particles and soluble species, diatom cells appeared to be Fe-limited once Fe as small colloidal particles had been used up. These results suggest that Fe in the small colloidal particle fraction was the most dynamic size fraction during the growth of the diatom Chaetoceros sp. In addition, to better understand Fe dynamics in the ocean, we must consider the influence of phytoplankton growth on small colloidal Fe [which is typically included in the dissolved Fe fraction (〈0.2 μm)].

    Notes: Abstract In aqueous solutions of chlorophyll (Chl) a with synthesized polypeptides, at high ratios of Chl to polypeptides (about 75–150 µM to 500 µM) clusters of polypeptides and pigment molecules were formed. The main absorption maxima of more than one formed cluster were located at about 500 nm (Soret band) and in the region of 720–806 nm (red band). The formation of these clusters was fairly slow (some hours) at room temperature and even slower at 4 °C. The rate of cluster formation increased with the increase in Chl concentration. The addition of the even low amount of reaction centres (RCs), separated from the purple bacteria Rhodobacter sphaeroides, to the sample of Chl with polypeptides caused a very strong decrease in the efficiency of cluster formation, and a change in concentration ratios of various pigment-polypeptide aggregates. It was probably a competition between the interaction of Chl with polypeptides and with the RCs. The yield of thermal deactivation of the clusters was high, much higher than that for the RCs alone and it was different for various types of cluster. The clusters absorbing at 725–750 nm were fluorescent with maximum of emission at about 770 nm, whereas clusters absorbing at about 800 nm were nonfluorescent.
