    Notizen: It has recently been established that Si self-interstitials are generated during annealing of high-concentration Sb layers in Si. In the present work, we make use of samples grown with molecular-beam epitaxy. We monitor, at different times and temperatures, the diffusion enhancement or retardation of deep B or Sb marker layers next to a 1.1×1020 cm−3 Sb box, as well as the formation of Sb precipitates within the box. It is concluded that the interstitials are not associated with precipitate growth, but that they are generated from formation of Sb-vacancy complexes, primarily involving 2 Sb atoms. © 2000 American Institute of Physics.

    Notizen: It is shown that the washed muscle fibrils obtained from watery pork have a lower water retention at low ionic strength, and much lower extract-ability at high ionic strength, than the fibrils from normal pork. These changes are accompanied by a gain of protein by the washed watery fibrils, and this protein originates from the soluble sarcoplasmic proteins. All the changes, including the characteristic gain of protein, can be artificially induced in normal meat by allowing it to pass into rigor at 37° C. The isoelectric region, or region of minimum swelling of watery fibrils, whether washed or unwashed, is similar to or slightly lower than that of normal fibrils. There is a broad isoelectric zone in both cases, extending from ∼pH 5 to ∼5.70. On the other hand, the IP of fully coagulated fibrils lies between 5.6 and 6.1. Washed and unwashed fibrils of watery meat show about the same degree of swelling at all pH values. Normal fibrils, however, show a higher water retention in the unwashed state than the washed. This effect is not due to the Mg or Ca ions included in the unwashed samples, but may result from interaction between the sarcoplasmic and fibrillar proteins. In the unwashed state, the swelling of normal fibrils is nearly double that of the watery fibrils at all pH values.It is shown that the rise of pH in intact carcasses of watery meat as they cooled from 37 to 10° C was probably due to the effect of temperature on the pK of ionizable groups of the proteins and buffering substances. It can be reproduced artificially and reversibly in native and coagulated minced meat, merely by raising or lowering the temperature. The titration curves of watery fibrils show similar titration constants (pK') to those of normal fibrils, but a loss of ratable groups. Heat coagulation, on the other hand, results not only in a bigger loss of titratable groups but in a much larger shift in the titration constants. These results can be interpreted to show that the fibrillar proteins of the watery fibrils are not denatured or aggregated in the usual sense, but are probably covered by a layer of denatured sarcoplasmic protein that is firmly-bound to the surface of the myofilaments.

    Notizen: We show that transient electron spin resonance (ESR) spectra of short lived radical pairs can be written formally as a superposition of Lorentzian-like lines and the corresponding dispersive lines. The coefficients to these spectral components depend strongly on the frequency and amplitude of the microwave (mw) field and consequently a variety of spectral forms may result. The coefficients, and thus the spectral form, are determined by the interradical interaction induced rate of change of the longitudinal and transversal electron spin polarization. The longitudinal polarization is responsible for the well known chemically induced dynamic electron polarization (CIDEP) which changes the intensity of the lines without affecting the line shape. The transversal polarization is shown to be responsible for the antiphase structure (APS) in accordance with our previous proposition [J. Chem. Phys. 109, 8743 (1998)]. A simple one re-encounter model calculation illustrates and explains qualitatively most of the observed APS characteristics. Numerical calculations are used to discuss anomalously large APS splitting. © 2000 American Institute of Physics.

    Notizen: Saithe Pollachius virens, tracked diurnally with a split-beam echosounder, showed no relationship between size and swimming speed. The average and the median swimming speeds were 1·05 m s−1(±0·09 m s−1) and 0·93 m s−1, respectively. However, ping-to-ping speeds up to 3·34 m s−1 were measured for 25–29 cm fish, whose swimming speeds were significantly higher at night (1·08 m s−1) than during the day (0·72 m s−1). The high average swimming speed could be related to the foraging or streaming part of the population and not to potential weakness of the methodology. However, the uncertainty of target location increased with depth and resulted in calculated average swimming speeds of 0·15 m s−1 even for a stationary target. With increasing swimming speed the average error decreased to 0 m s−1 for speeds 〉0·34 m s−1. Species identity was verified by trawling in a pelagic layer and on the bottom.

    Notizen: Pelagic North Sea whiting Merlagius merlangus fed at night, while demersal whiting fed by day. The estimated specific daily ration ranged from 4·38 to 7·84% in 1992 and from 3·99 to 10·31% in 1993 using the in situ rate of gastric evacuation. Using Andersen's evacuation model the specific daily ration ranged from 0·41 to 1·66% in 1992 and from 0·78 to 1·75% in 1993. The specific daily rations were significantly different where energy density of stomach content by length class of whiting was significantly different between the two layers and years. The fact that daily ration was related to prey composition and energy density of the prey and spatial distribution of the whiting, demonstrates the need for a sampling design that includes both pelagic and demersal layers when quantifying the food consumption of whiting.

    Notizen: The energy density (ED, kJ g-1 wet mass) of saithe Pollachius virens, haddock Melanogrammus aeglefinus, whiting Merlangius merlangus, Norway pout Trisopterus esmarki, herring Clupea harengus, sprat Sprattus sprattus, sandeel Ammodytes marinus and pearlsides Maurolicus Muelleri, from the North Sea, increased with total length, LT. However, there was not always a significant (P〉0·05) linear relationship between LT and ED. Seasonal differences in ED were obvious in mature fish, while geographical differences were insignificant. For all species there was a highly significant correlation (P〈0·0001) between the percent dry mass of the fish (DS) and ED. A general relationship was established for gadoids and sandeel ED=–3·1492+0·3459 DS and herring ED=–4·6395+0·4170 DS. Thus seasonal and size-specific data on ED needed for bioenergetics and gastric evacuation models can be determined simply from DS, which is considerably less costly and time consuming than calorimetry or proximate analysis.

    Notizen: Continuous recordings of pH and temperature changes, during postmortem chilling, were made on 20 Danish Landrace carcasses. The continuous recordings from these carcasses depicted at least four distinct types of post-mortem pH patterns: 1) a slow gradual decrease to an ultimate pH of 5.7–6.3; 2) a gradual decrease to about 5.7 at 8 hr, with an ultimate pH of 5.3–5.7; 3) a relatively rapid decrease to about 5.5 at 3 hr, with an ultimate pH of 5.3–5.6; 4) a sharp, significant decrease to a pH of about 5.1 at 11/2 hr, and a subsequent elevation to 5.3–5.6. The first 3 types were acceptable in structure, color, and water retention, whereas type 4 represented pale, exudative tissue with soft, inferior structure. The violent nature of the post-mortem changes in tissue with the type 4 pH pattern were discussed, as well as the possibility of a more rapid onset of rigor mortis in this tissue. Although the pH values of the pale, exudative tissue were elevated during chilling, it appeared that they remained generally lower, ultimately, than the normal tissue. On the basis of comparisons between muscles, it is suggested that in addition to chemical composition, the chilling rate of the individual muscle may also be an important factor in determining pH pattern and ultimate muscle structure.

    Notizen: Preliminary observations were made on biopsy and post-mortem samples from six Danish Landrace barrows. Additional studies were also conducted on post-mortem muscle samples from 30 Danish Landrace pigs of known breeding and nutrition. The biochemical characteristics studied were related to the continuous post-mortem measurements of pH and temperature, which were used to predict muscle structure. These data imply that the biopsy samples from pigs that ultimately showed the severe depression and elevation in pH pattern, contained greater total glycogen, lower percentage of acid-soluble glycogen, and faster phosphorylase activity. Similarly, these pigs possessed a smaller pyruvic acid pool and a greater lactic acid concentration. Results from measurements of methylene blue reduction, in the presence of lactate, suggest that the methylene blue is reduced much more slowly in muscles from pigs with the type 4 pH pattern. Although this criterion was significantly correlated with zinc concentration, ultimate color intensity, and water-binding capacity, special emphasis was placed on the severe limitations that must be imposed on interpretation of this measurement. The significant correlations collectively suggest, however, that if the samples showed a rapid reduction of methylene blue, they were ultimately uniform in color, dry in appearance, and firm in structure. Significant additional correlations were shown for numerous biochemical characteristics of pork muscle tissue.
