    Notes: Contents of moisture, fat, protein, and eight minerals in commercial broiler breast and thigh meat were defined by analyzing 15-bird lots in a factorial design of two sexes × two commercial strains × three widely separated regions of production. Small but statistically significant differences due to strain, sex, and region were found for many of the variables examined. Region significantly influenced all the element levels except phosphorus in both breast and thigh flesh. Calcium levels found were about half those previously reported. The differences are probably not nutritionally important under normal consumption patterns.

    Notes: Fowl meat processed in cans and flexible retortable pouches was evaluated for heat effects on sensory properties. A trained panel evaluated texture and off-flavor of canned boned chicken, uncooked fowl meat retorted in flexible pouches, cooked meat retorted in flexible pouches, and simmered fowl meat (control). Results indicated that the retort pouch process may offer a method for improving the texture of processed fowl meat from spent hens by adequately cooking to tenderize the meat but not overcooking it to the extent that meat chunks are reduced to fibrous, shredded, or stringy components. Off-flavor development was related to pre-cooking before retorting.

    Notes: The lack of domestic retail markets and poor quality and acceptance have hampered the optimum use of spent fowl (old laying hens) as a highly nutritious, inexpensive, and convenient food. Major outlets for canned boned chicken have been developed through USDA and military food programs. The purpose of this study was to compare canned boned chicken products (USDA, military, and retail) using Quantitative Descriptive Analysis (QDA) techniques. In general, USDA school lunch products were characterized as having more ground and shredded meat constituents than the retail or military products. School lunch products were also less tender and cohesive, quicker to breakdown on mastication, less juicy, more off-flavored, and less desirable than the retail and military products. Through factor analysis and calculations of factor scores, the original set of 12 numbers to characterize a product was reduced to four numbers that revealed the extent to which products exhibited attributes represented by the factors. All USDA and military products met their minimum specifications for proximate composition and yield. However, USDA school lunch products varied in ranges of moisture, fat, protein, and drained weight.

    Notes: Diskussion Publikationen über die Anwendung der epiduralen Morphinapplikation in der Geburstshilfe liegen bislang von englischen Arbeitsgruppen vor. So berichten Husemeier et al. über keine suffiziente Analgesie nach Injektion von 2 mg Morphin verdünnt in 8 ml Kochsalzlösung, während Perris et al. in 50% der Fälle eine sehr gute und in weiteren 43% eine mäßige Beeinflussung des Wehenschmerzes beobachten konnten. Das kardiozirkulatorische sowie respiratorische System blieben dabei ebenso unbeeinflußt wie die sympathische Aktivität der Schwangeren. Neben diesen durchaus positiven Untersuchungsergebnissen sind aber auch Mitteilungen publiziert worden, welche eine nach Naloxon reversible Depression der Respiration beschreiben, wobei der analgetische Effekt durch das applizierte Naloxon unbeeinflußt blieb. Unsere eigenen Erfahrungen mit der morphininduzierten Epiduralanalgesie ließen bislang keinerlei Nebenwirkungen am maternalen wie fötalen Organismus erkennen.

    Notes: Summary The soluble proteins of four organs (liver, kidney, brain and muscle) of mice from four inbred strains (C57BL/6J, DBA/2J, AKR/J and BALB/cHan) and offspring from cross-breedings therefrom are investigated for genetic variants.     Notes: Summary This paper describes two ecdysone-deficient, recessive-lethal mutants,lethal(1)giant ring gland (grg) andlethal(1)suppressor of forked mad-ts (mad-ts: Jürgens and Gateff 1979) and compares their ecdysteroid titers with that of the wild-type. Mutant larvae show a much reduced ecdysteroid content, amounting to 1/10 to 1/30 of the wild-type values, but never a true titer peak. They fail to pupate and die after 1–3 weeks. Ecdysteroid feeding elicits different responses in the larvae of the two mutants.mad-ts larvae pupate within 24 h, thus showing that their low ecdysteroid titer is directly connected to their inability to pupate.mad-ts resembles the mutantlethal (3)ecdysone-1 ts (Garen et al. 1977). Thegrg mutant larvae, on the other hand, fail to pupate after 20-hydroxyecdysone feeding as well as injection. The primary defect of thegrg mutant is not entirely clear. Thegrg larval salivary gland cells appear to possess normal ecdysteroid receptors. Furthermore, the low ecdysteroid titer ingrg is not the result of an increased ecdysteroid catabolism. The primary defect in the mutant may lie in the malfunctioning neurosecretory cells which do not show neurosecretion in histological preparations. Further support for this notion comes from electronmicrographs of the enlargedgrg ring glands which, in contrast to the wild-type, do not possess nerve endings. In the wild-type three ecdysteroid peaks were found: one shortly before puparium formation, the second at approximately 12 h and the third at about 30 h after pupation. The ecdysteroid titer peak in late third instar, wild-type larvae is mainly due to the presence of 20-dydroxyecdysone as shown by radioimmunoassays after thin layer chromatography and derivatization followed by gas liquid chromatography and mass spectroscopy. In addition, a number of unidentified polar and apolar metabolites were also present.

    Notes: Abstract A series of micropuncture experiments were performed to assess whether phlorizin inhibition of proximal tubular glucose reabsorption inhibits proximal tubular fluid reabsorption due to a change in the transepithelial osmotic gradient for glucose. End proximal tubular filtrate reabsorption was measured, control vs experimental, in the same rat. The effects of infusing phlorizin in one group were compared to those of graded small infusions of mannitol in a second group of rats. In the phlorizin series tubular fluid and peripheral plasma were analyzed for glucose. Net renal sodium and renal oxygen consumption were measured in these same rats. In the mannitol series tubular fluid and peripheral plasma mannitol concentrations were determined. The results show that phlorizin inhibits proximal tubular fluid and glucose reabsorption without changing renal oxygen consumption. Mannitol inhibits proximal fluid reabsorption per unit transepithelial concentration difference to the same extent as does glucose during phlorizin infusion. We interpret these data as most consistent with the conclusion that the reduction in proximal tubular fluid reabsorption during phlorizin infusion is primarily due to the resultant change in the effective transepithelial osmotic gradient for glucose. Normally this gradient favors net fluid reabsorption. During phlorizin it favors retention of fluid in the proximal tubular lumen.
