    Notes: Initially, the effect of water activity (aw) on heat resistance of Bacillus cereus spores (decimal reduction time) was investigated. A linear relationship was found between log D and 1-aw. The combined effects of temperature (85-105°C), pH (4.5-6.5) and water activity (0.80-1) were then studied. A four parameter model was fitted to the data. This model appeared to be parsimonious with each parameter having a biological significance. Interactions between factors were observed but they accounted for 〈2.4% of the total variation and they were not taken into account by the model.

    Notes: A generalized linear-Bigelow model was proposed to describe the effects of both temperature and pH on spore heat resistance. The model required only 3 parameters, each having a physicochemical significance. In addition to the conventional z value, the effect of pH on thermal resistance of spores was characterized by a zpH value. Although the model neglected interactions between temperature and pH, its goodness of fit and its robustness enable it to be applied for optimization of heat treatments. Further experiments need to be undertaken to validate the model under industrial conditions.

    Notes: Summary The sensitivity of the radiometric detection of microbial contamination based on the labeling of cells by 14C-lysine was studied as a function of the lysineconcentration and its specific activity for a strain of E. coli and a strain of S. cerevisiae. It was found that best conditions of detection were given by a labelled lysine specific activity of 200 mCi/mmole and a medium radioactivity of 0.2 μCi/ml.
