Notes: Abstract Adding Saccharomyces cerevisiae, along with natural bacterial flora of the ingredients, was the best method for standardizing idli termentation in terms of improved organoleptic characteristics, leavening and nutritional constituents.

Notes: Summary Laccase production was higher in malt extract medium than in lignin, andPolyporus sanguineus appears to be better thanPolyporus versicolor andTrametes hirsuta (syn.Polyporus hirsutus) for enzyme production. Phenolic compounds, of which resorcinol was the most active, induced enzyme production; while sugars repressed it. A temperature of 37°C, pH 3 and indulin AT at a concentration of 0.2% gave the best enzyme yield.

Notes: Abstract Action of amphotericin B on the growth and metabolism of Aspergillus fumigatus has been investigated. The fungus proved to be very sensitive to amphotericin B, showing complete inhibition of growth at 0.5 units/ml. Amphotericin B suppressed the exogenous and endogenous respiration and glycolysis of A. fumigatus as well as the assimilation of various glycolysis and TCA cycle intermediates. Addition of cations and cholesterol failed to reverse the action of amphotericin B. The treated mycelium released a variety of cellular constituents and it is inferred that the antibiotic effects the permeability of A. fumigatus cells. In experiments with 32P labelled mycelium phosphorus compounds leached out in concentrations which were dependent on the antibiotic dose, period of contact, incubation temperature and metabolic state of the fungus.

Notes: Abstract Ten species of thermophilous fungi were identified from forest soils of Darjeeling in Eastern Himalayas. Five fungal species are reported from forest soils for the first time andAspergillus fumigatus var.ellipticus is a new record for India. This was also the commonest fungus followed byA. viridi-nutans. The temperature responses of the fungi revealed 1 microthermophile, 6 thermotolerant and 3 true thermophilic species. There was a decrease in the prevalence of true thermophiles with increasing altitude. Thermophilic species showed faster growth rates as compared to microthermophiles and thermotolerants. Two species of thermotolerant fungi are reported in addition to those already recorded in the literature.

Notes: Abstract An aerial survey for fungal spores in Amritsar has been carried out by petri plate exposure method for a period of one year. A total of 23 fungi appeared in the plates. Out of these Aspergillus was the commonest fungus representing 21.69% of the total colony count followed by Alternaria, Curvularia and Fusarium. There was seasonal variation in the prevalence of fungal spores. A comparison of the prevalence of fungi in diseased and healthy eyes and the atmosphere of Amritsar appeasrs to support the view that these fungi are transient residents in the eyes depending on their availability in the atmosphere.

Notes: Thirteen yeast species belonging to nine genera were screened for the production of single-cell protein (SCP) using cheese whey as the substrate. Cheese whey supplemented with minerals and yeast extract proved to the best medium for yield, lactose utilization, biomass production, and conversion efficiency. Production of β-galactosidase was studied in Brettanomyces anomalus, Kluyveromyces fragilis, Trichosporon cutaneum, and Wingea robertsii; the last proved to be the best strain combining high yield with shorter incubation period.

Notes: Summary Dosa batter fermentation was optimized by employing a variable set of different physicochemical conditions for further raising the nutritional levels. The best combination of these parameters was incubation at 28°C, with initial pH 4.5 and supplementation of the batter with free sugar (sucrose, I-2%).

Notes: The addition of 1 mM cyclic AMP to induced and repressed cultures of Aspergillus nidulans and its mutant strain (CRR 141) resistant to catabolite repression was fully capable of releasing the wild type from catabolite repression while it caused hyperproduction of cellulases in glycerol repressed cultures. The relief of the catabolite repression was also accompanied by a dramatic drop in enhanced protease levels, thereby indicating that the synthesis of proteases (during the catabolite repression) is under the control of cyclic AMP.

Notes: The maximum production of cellulose enzymes (FPactivity, CMcellulase and β-glucosidase) in the culture filtrate was observed at 27°C and pH 5.0, except for β-glucosidase, being at 6.0. The levels of extracellular enzymes in shake and stationary culture conditions was almost equal although they reached their maxima earlier in the former. The distribution of the three enzymes in extracellular, cytosol and cell debris fractions revealed most of the FPactivity and CMcellulase occurring extracellulary. More than 50% of the β-glucosidase was present in the cell debris fraction.
