Zusammenfasung Unter den Reaktionsprodukten, die bei der Behandlung von Muskelfleisch mit Natriumnitrit in der Hitze auftreten, konnte im Modellversuch erstmals Distickstoffoxid (N2O) nachgewiesen werden. Mit Hilfe eines Trägergases wurde das N2O in eine Vorlage mit Silicagel gebracht und bei −40° C adsorbiert. Die Desorption gelang durch Erhitzen auf 150° C; der Nachweis und die Bestimmung erfolgten gaschromatographisch unter Verwendung des Wärmeleitfdhigkeitsdetektors.

Summary N2O was determined among the gaseous reaction products of nitrite with beef by heating in laboratory tests. By means of nitrogen N2O was brought to silicagel and adsorbed at −40° C. The desorption succeeded by heating to 150° C. The gas was transfered with helium to agl-chromatograph and estimated with the thermal-conductivity detector.
