Zusammenfassung Die Sorption von n-Butylamin an zahlreiche Lebensmittelbestandteile und Lebensmittel wurde mit gravimetrischen, gaschromatographischen und infrarotspektroskopischen Methoden untersucht. Salze werden mit Säuren und sauren Kohlenhydraten gebildet, Amide mit trockener Pektinsaure und (möglicherweise) Pektin, Maillard-Produkte mit reduzierenden Zuckern. Die Sorlotionskapazität nahm in der Reihe: Säuren und saure Kohlenhydrate 〉 neutrale Kohlenhydrate 〉 Proteine 〉 Glycin, Harnstoff, Natriumchlorid ab. Amine werden durch Kohlenhydrate besser gebunden als Alkohole, vermutlich über O-H ... N-Brücken. In ähnlicher Weise wie n-Butylamin werden n-Pentylamin, Diäthylamin, i-Butylamin und tert.-Butylamin sorbiert. Die sorbierten Mengen und vor allem die Sorptionsgeschwindigkeiten nahmen, vermutlich aus sterischen Gründen, in dieser Reihenfolge ab.

Summary The sorption of n-butylamine by various food components and foods has been investigated with gravimetric, gas chromatographic, and infrared spectroscopic methods. Salts are formed with acids and acid carbohydrates, amides with dry pectic acid and possibly with pectin, Maillard reaction products with reducing sugars. The sorption capacity decreases in the order: acids and acid carbohydrates 〉 neutral carbohydrates 〉 proteins 〉 glycine, urea, sodium chloride. Amines are better bound than alcohols by carbohydrates, presumably by O-H ... N bindings. n-Pentylamine, diethylamine, i-butylamine, and tert.-butylamine are sorbed in a similar manner. The sorbed amount and especially the rate of sorption decrease in this order, presumably due to steric hindrance.
